protein muffin recipe post from chat tonight

Butternut Currant Mini Muffins
Yields 24 Mini Muffins

DRY ingredients:
5 scoops vanilla or cinnamon whey protein (I used Body Fortress)
1 cup Splenda
big shakes of cinnamon and nutmeg
2 tbsp dried currants (Why? They're smaller than raisins, that's why!)
2 tbsp finely chopped walnuts
2 tsp baking powder
1 tsp baking soda
dash of salt

WET ingredients:
1/3 cup mashed butternut squash (you might use canned pumpkin)
4 tablespoons margarine (I used "I Can't Believe Its Not Butter" Light)
1/4 cup egg beaters
1 tsp vanilla extract

1) Preheat oven to 350 degrees
2) Mix wet ingredients in small bowl: dump into dry ingredients and mix well.
3) Spray 2 mini muffin tins well (yields 24) with nonstick spray.
4) Fill each cup about 3/4 full with mixture
5) Cook 10 minutes and take out right away.

Really nice warm with a little butter spray!

The squash can be substituted with a single serving cup of sugarfree applesauce.  Try to substitute sugar free coffee flavorings for the vanilla for a change in flavors.  Imagine hazelnut flavored coffee syrup, chocolate protein powder and applesauce.  The possibilities are endless.  These are good warm or next day.  My non WLS hubby likes these too.

Sorry I missed chat tonight.  I was really looking forward to it.  We unexpectantly had to run out to the AT&T store as Michael's phone quit working.  To make a long story short, they are sending him a new one for no cost, thank God.  Hope to be able to make it next week.

This would be my first attempt at using protein to bake with.  I'm wondering if a smashed banana would work instead of the squash or pumpkin?

Yes it will, Anything soft, banana, sugarfree applesauce, squash.  A single serving container of sugarfree applesauce is just the right amount.

Thanks for posting this.  It sounds delicious.  All of my protein recipes are cold, because I can't find one that mixes at a hot enough temperature.  With winter here, this is really appealing.

I tried the muffins today and they were super yum!!  I used the applesauce in place of the squash.  It kinda reminded me of a carrot cake. 
Thanks again for posting, it gives me something quick and easy to grab and go.
