Quick & Easy Summer salad recipe
I had tried this recipe for a salad and made some variations to it but don't know the fat content. Its for a Butter lettuce salad.
It should serve about 2
What you will need:
-1 Bag Fresh Express Sweet Butter salad mix (Any Brand will do but this is what I used)
- 2 eggs poached ( with runny center)*
- 4 slices Low sodium Bacon ( I used Bar-S) reserve bacon fat for dressing
- 4 tbs red wine vinegar
- 1 tbs Dijon mustard
- 1 tbs brown mustard
- 1 tbs honey

Start by placing a frying pan half full of water to boil. Next, slice bacon into 8 pieces and fry until crispy. Once water starts slightly boil crack egg into a small dish or use a measuring cup to easily and slowly slide the egg into the water. While egg is cooking, rinse the salad and separate to two dishes. Drain the bacon fat in to a small bowl and add the vinegar, mustard's and honey. Add salt and pepper to taste (you can also try adding herbs or garlic if you'd like). Whisk or stir with fork.
Once egg is done, place it on the bed of butter lettuce, divide bacon and add on top of egg and add dressing. Salt and pepper to taste.
I love this salad and so does my daughter. She is a big salad fan...except she hates raisins in her salads lol. Try it an let me know. As far as the calories the bacon has 80cal and 7g fat and the egg has 74cal 5g fat. The lettuce is only 10 cal.
I would serve this with wedged tomato drizzled with a bit of olive oil, vinegar, salt and pepper on the side.
