CALLING ALL SINGLE COOKS!

Ok.. I was wondering of you all might have some tips on "cooking single".
I find myself with either tons of left overs or providing food for people at work because it is now harder than ever to cook for one.

Before surgery it was a little bit of a challenge, but now cooking for just me seems crazy.
I have a hard time reducing recipes for just one serving since that one serving size will normally last me a couple of days.

Any tips?

I freeze extra food in single serve portions. Then when I do not want to cook, I still have a healthy meal that fast and easy and there is no waste.
I got one of those vaccume food sealing things and use that. Makes things last a lot longer in the freezer.

I too struggle with keeping the food I make a small enough emount for just me and my husband, who eats very little too... so this is how I do it to keep from wasting food.

I agree with the freezing. Put things away in small containers right after you cook and they are not leftovers, just planned mini meals. I know semantics, but we have to deal with our brains too. It is hard to cook in small amounts. I find that any can of food that I open lasts several meals and I tire of one food before it is gone. Hugs

 I have frozen chili and spaghetti sauce in the freezer in little 1/2 cup containers. I also buy the bag of frozen shrimp, scallops, and fish and keep in the freezer. This way I can take out what I need for my dinner or lunch for the next day. I also will only have to cook one chicken breast and that will last for three meals that week. I'm getting good at stir-fry. LOL!  It's hard but with a few veggies you can steam what you need, I had to change my habits to only buy exactly the amount of veggies or fruit I need. even if it means cutting half an apple and then cutting the other half the next day.  

The salad bar at work has been my friend for the veggies I may need for one meal but don't really need a whole bunch. I just grab a few and take it home for dinner to cook.

there is a crockpot cooking recipe book for 2 that makes a nice amount for 2 people and then you can freeze a small meal left overs for another time.
