If I find any ideas for dishes you may like, I will send them you way.  I grew up in a scandanavian area, food for the most part is pretty bland.  Love to hear of any ideas you do get.  I like a little spice in my food from time to time.  We used to raise hot peppers in our garden when I was a kid, accidentally wiped a finger near my eye a time or two.  sniffle, sniffle.....

I'm also Puerto Rican and a month out from surgery.  I'm not a real cook!  LOL!  But, I do crave Spanish food all the time.

In essence - Rice and beans combination is so far a no-no for me.  Too many carbs.  I want to lose weight desperately so I'm staying away from carbs.

I have cooked Puerto Rican style stewed chicken and it was fabulous!  Tons of sofito, a little bit of potatoes (for the family not me) and I ate it like that - without rice.  I didn't even make any.  My family can adjust to living without so many carbs.  Afterall, I put potatoes in the stew for them!

Yesterday (Good Friday) I made Bacalao Salad and it was soooooooo good!  I didn't eat any of the potatoes I put in there and in the end I estimated that I ate about an ounce of fish, one slice of tomato and about half an egg.  Not alot but it was so fabulous to eat our typical meal on this solemn holiday.

I haven't moved on to red meats yet.

While you're working on losing weight, it may mean that your family will have to fend for themselves for a while.  I prepared my family before my surgery and told them that I wasn't going to make anything that I myself could not sit down and eat!  LOL!

What have you tried?  I'd love to keep in touch with you as we both try to figure out Spanish meals.

Hi I am so glad you wrote me, sorry I took so iong to answer for I go to school online and it is so hare to keep up.  I also could not eat the rice either but now I buy success brown rice in the bag anI boil it longer then what it says so it will be softer,  i like that pretty good and if I get  of looking at the brown rice i do put some sazon con achote to make it look like red rice, and it is healthy.   I don;t do the rice everyday like I use to but the brown rice at least won't make you feel quilty.  I will look for you and request you as a friend on MY oh so this way we can keep intouch and exchange information it you want ok talk to you soon,  Keep in touch.
