Bariatric Buddy

no bake cookies

2 cups. splenda
1/2 c. cocoa
1/2c. milk (can use non fat)
1 stick butter
1 t vanilla
1 1/2 cups pieces of pecans
1/2 heaping cup of peanut butter (smooth or crunchie)
3 cups of oats

in big saucepanboil the sugar, cocoa, milk, and butter. remove from heat, stir in vanilla and peanut butter, stir until smooth, blend in pecans and oats. mix very well. drop onto waxed paper and allow to cool.  each cookie should be about 2 heaping tablespoons when you drop. 


don't know the calories, but shouldn't be too bad but the protein is 4 grams per cookie and they are good for you with the oats, pecans, peanut butter

You are going to get me craving these.  One of these days I will make this.  I bet Dennis will eat them too.  Can't go to wrong with peanut butter.

To reduce the fat in these cookies I only use 1/2 stick of butter and add 3/4 cup MORE peanut butter -- To up the protien I only use 1/4 C cocoa and add 4 scoops of Chocolate protien powder -- however add the protien powder to the oats  BEFORE mixing into the hot mixture or it Clumbs horrrrribly!! If you use protien powder you may want to use a bit less sugar.

Here is another good cookie --- they are Flourless....

1 C peanut butter
1 C. Splenda
1 Egg

Roll into balls flatten with fork Bake at 350 for 12 -15 minutes.  Makes 12 cookies.

i like the idea of more peanut butter. i will give that a try.  that alone adds to the protein.  think i will stick with the cocoa though.  thanks for the other recipe also. vick
