I am breathing - that is a great start for the day - I am feeling a bit better today - I am hopefully getting staples out today - fun not - but something to look forward too as that mean I am one day closer to feeling 100% --

As for being productive - I AM MAKING DINNER!!  Although I am limited in what I can do at the moment -I WANT to feel productive, needed and helpful - Handsome man helped me figure out HOW I could make dinner today!! He got everything I will need out on the counter and kitchen table so I can reach everything, not go against Dr.s orders and not hurt myself in the process!!

I am cutting up a pot roast in to 1/2 inch cubes tossing them in the pressure cooker - adding onion and carrots - beef broth - will cook in about 20 min... thicken it a bit and have with mashed taters (which hubby will peel and cube when he gets home)

I LOVE my pressure cooker - takes those tougher meats that WLS peeps have a hard time with and makes em moist and tender!! I could never eat roast as when chewing it would just ball up bigger and bigger when chewing and there was NO way I could swallow it - would end up with a ouchy pouchy if I had, So I decided one day to bring out the pressure cooker and see what I could come up with on those same tough meats.... Makes a WORLD of difference!! The smaller the pieces the more tender the outcome!

Ok I have babbled enough.... off to the couch and some DVR'd programs that have been awaiting my viewing....

Hugs

Glad you are feeling a bit better Phyl. Don't over-do things now! Hope all goes painlessly with staple removal, and hope you are healing well.
I have a pressure cooker too, actually 2 of them, and I LOVE em, especially for cooking roasts and beef dishes. Cooks so much faster and comes out fall apart tender!
Well gotta run! Love and hugs to you! Keep getting better each day! Thanks for checking in.
