cooking show for bariatric patients

there is a new cooking show called "eating right every bite" on the  weightlosssurgerychannel.com.            it is brand new and you should check it out if u like to cook. this program he has some chilled salads and a grilled chicken and pecan salad.  i haven'****ched it yet but i am as soon as i finish watching my movie. thought u might want to know about it. vick

Oh kewl! I will have to check it out, I'm not too into cooking alot since my wls, but still have to do it, so why not get some good meal ideas? Thanks for sharing this info!

Watched the episode.  I want to go grill some chicken to try the grilled chicken and pecan salad.  Easy prep, like it that way.  Not so sure abou****ermelon and scallions in a salad.  may take time to wrap my mind around that ides.  I clicked on the download for the recipes and added them to the recipe thread above.

good idea kathy. i don't know how to do that. oh yea, i won't be at the chat monday. my doctor's appointment is a five hour drive so i won't be home til late.  keep them on their toes. lol vick

OKKKKKKK, I couldn't wait.  I'm hungry after walking at the fair.  I didn't make beef in the crock after all today.  Found chicken on sale, gave my hubby a choice between beef and chicken, he picked the chicken.   The chicken salad recipe sounded so good that I improvised my own recipe from cooked chicken leg quarters.

Funny story before the recipe.  Put the chicken in the crock before I went to the fair.  Seasoned with celery seeds, garlic podser and bay leaves, added water and set crock on high.  Love that combination.  Left it cooking for hubby to have some for supper.  Asked him to take the meat out of the liquid and put it in the fridge before he went to work.  Explained that the bay leave was not to be eaten, and he could throw it away when he took the meat out of the crock.  I gave him the option to take the meat off the bones, or leave it on.... just to be sure to refrigerate it. 

Bless his heart.  He tried to take the cooked chicken meat off the bones.  I don't think he has paid close attention to this task. ( he only cooks things that have 4-5 ingredients and well written instructions)   I opened the container of chicken meat, minus the bones.... well at least minus the large bones.  I found the small bones of the lower leg, the tendons and joints and the skin/fat in with the meat.   He really did try.  Gets an "A" for effort.  I finished the task, sorted out the inedible parts, as I tried to ignore the begging eyes of the dogs.  I didn't have the exact ingredients in the house, improvised.

Back to the recipe.  I took 1 cup of cubed cooked chicken, 2 tablespoons of minced raw onion, 2 tablespoons of minced/chopped red bell pepper, a splash of bottled lemon juice, salt and pepper, and snipped fresh chives and basil from the garden.  mixed it together and added 1/4 c. mayo.  Mixed well.

I plated it like the chef did on the show, even added extra chives for garnish.  Took a photo, just don't know how to add it to my message.  I will upload it on my OH page.  Munching on it as I wrote to bariatric buddies.  I will try this again.  Mmmmmmmmmmm

Didn't have any pecans, was going to try walnuts.  Forgot to add them, good without the nuts too.

Funny story about the hubby. He meant well huh? LOL... Sounds like something my hubby would have done, back when he could see!
