Counting fat and sugar grams
I.e. losing on 1200 cal
Proteins =125 gr = 500 cal
Carbs : 50 gr = 200cal
Balance : 1200 -500-200=500 cal is 500/9=55 gr of fat.
When maintaining I try to get 1400-1600 cal and app 150 gr of protein, 60 or less carbs and rest from fat.

It is important to watch our fat intake as well as refined carbs, but if you've had wls that includes bypassing part of the intestines (which causes malabsorption like RNY, DS), you will always malabsorb some degree of fats, calories, vitamins, nutrients, hence being careful about supplementation for the rest of our lives.
This doesn't give us leeway to "go all out" and eat whatever you want, though. I don't know if you've ever noticed, and this is sort of graphic, but I am 13 yrs out and if I "overdo" fats with a real fatty meal...it shows in the toilet as an oil slick. This also depends on the length of your bypass (whether you are proximal, medial, distal).
Like H.a.l.a., I do fats, but "good fats" like olive oil, nuts, some butter occasionally, and I don't count fat grams. And she is correct about fats making our bodies "happy", lol. It definitely keeps us feeling fuller longer.
I think you have to find what works for you. I watch protein (80-130), fat (>30), carbs (>100), salt (.1800), and sugar (>30). If I go over these numbers I tend to gain or stall.
Good luck
