It is a gorgeous Saturday here today with temps around 74 degrees. Just Beautiful!! My eats for today are:
Breakfast: Coffee & Miralax
Snack: Quest Brownie Bar
Lunch: 1/2 Turkey Sandwich and some Raisnets (boo)
Snack: Quest Cookie Dough Bar
Dinner: Mexican Chicken Chili (Yummy!!)
Snack: Vitatop

It was a really nice day today here in NYC. I actually walked 3 minutes this morning.
Well back to the books tomorrow. Finally only 4 more classes till my December graduation.
Today my eats have been:
Breakfast: 1/2 of Hi Lo Maple Pecan Cereal with Almond Milk
Snack: Coffee
Lunch: 1 cup of Hi Lo Cereal Vanilla Almond with Almond Milk
Snack: 2 mini boxes of Raisin and 2 slice of Lite Cheddar Cheese
Dinner: 1 cup of Hi Lo Maple Pecan Cereal with Almond Milk
Snack: if I need one I will make a Fruit Smoothie
(The funny thing today is that I made a Vindoloo Curry with Shrimp and a Goan Fish Curry both are a Indian Curry dishes, Tomorrow I will grill or broil some chicken wings with a Chili Lime Sauce, they been marinating since this morning)

What a great day it's been. I haven't stopped running since I got up this morning. Sleeping in was just an added bonus. The house is clean. Laundry is done. Even the dog got a much needed bath---not sure what she found to roll in when we took our walk this afternoon but GOOD GOLLY she stunk. If only the wind wouldn't have blown quite so hard today. It had a bite to it.
Breakfast: Granola Bar
snack: coffee, coffee, coffee
Lunch: Tomato soup & 1/2 a grilled swiss on wheat
snack: more COFFEE
dinner: Spaghetti (no pasta - just sauce for me)
snack: small piece of chocolate cake
Oscar the pouch does not like pasta or rice. I learned that long ago so I reward the grouchy pouch with just sauce in a bowl. I do miss rice. It was a staple prior to surgery but it seems now that anything that will continue to absorb water and/or expand after eating HURTS. Hmmmm...if only all carbs worked that way.

I loved pasta too! Every once in awhile I will dip my toe in the pot to see how the noodles will treat me today. Most time it is not good but I try. I do miss it. I never was a rice eater so that was not an issue for me. I made that Mexican Chicken Chili tonight and it was awesome. Went to my sister's house to help set up for a baby shower for my niece tomorrow. It should be fun. Have a good night.
Since my surgery I could not do rice and pasta. But, I figured out just last year if I cook my rice (white or brown) let it cool/get completely cold and section it off (into serving sizes for myself) and freeze them when I reheat in the microwave it don't hurt my stomach. However, when I do use/eat rice I have it with a curry dish where it take on the sauce from the dish (curry). I haven't tried just eating rich plain yet.
Since I am single and like/love to cook I have to freeze my left over or thrown them out. Its better on my budget to freeze. But with the rice freezing it lock in mostiure. And when I want rice I have several 1 cup containers in my freezer I add to my curry dishes. I haven't figured out the pasta yet however I do make a few dishes with the Orzo pasta, I just let it sit in the boiling water a few minutes longer to absorb more water. which makes it soft (over cook the pasta)
Hi Wanda,
I've been salivating over your mention of curry dishes. Could you possibly post a couple recipes when you get the time. I'm also single (widowed) and love to cook for myself as well as for family, but cooking for one is so much easier as I have only myself to please.
I would especially like to know what kind of curry you use, as I know there are many to choose from. I love hot and spicy foods, the spicier the better. Thanks, and hope you have a pleasant Sunday afternoon.

Late night here, watching a horror movie while posting todays meals. I did my recumbent bike workout early today, 34 mins, covering 4.1 miles. I had planned to workout again this evening, but got caught up in returning phone calls. Oh, well...tomorrow will suffice.
Anyone ever heard of the Low Carb Pavilion site? Visited today...great info on low carbing, with food lists, etc.
Today I ate:
B: 1 egg and 1/2 c eggbeaters, 3 1/2 sl turkey bacon, apple slices
S: coffee w/splenda, 2 tbsps half&half
L: 4 ozs rotisserie turkey breast on sandwich thin, 1 tsp light and 1 tsp real mayo, 1 c sliced strawberries
S: 1 packet plain oatmeal w/splenda and cinnamon
D: 4 ozs turkey meatballs w/mushrooms and peppers in marinara, 1 c turnip greens
