Weekly update - details... let's try it again...
Hello everyone.
My weekly status:
weight: not sure - need to go on a scale.
Exercise: Need to do more. Have not really exercised much and someone told me today that they see me gaining weight. Not cool... I will be very busy this week but I do start exercise next week. This week- just diet.
Diet: same as before:
Gluten free, starches free, low carb diet - low sugar diet, no fruits etc. really works for me. I still get hungry when I don't eat on time but I no longer have the low blood sugars. Now I can limit not only the foods but also calories, can exercise without worrying about my BS. It is huge issue for me. No longer I get into a panic when I get hungry - in the past - I would get hungry and if I did not eat - or didn't eat enough - my BS would drop. No longer the issue. I do miss fruits and my wraps, but having stable BS is worth the sacrifice.
I decided to give up the wine again. Maybe I have some as a treat over holidays
I use nuts a seeds as snacks - that is a very high calories food so I need to restrict that.
Areas I need to work on:
- need to limit calories - I can do that.
- need more exercise.
- with no exercise - my weight may be stable but my size is getting bigger. The body replaces the muscles with the fat. Fat takes more space - I get bigger. Not cool.
Let me know how you guys are doing: what is working for you and what is not working...
A quick recipe for a very nice breakfast - or snack anytime:
Protein pancakes:
(I make enough for 3-4 servings)
2 eggs (or egg whites - that will be my option next few weeks)
splash of milk (I or water, use unsweet coconut milk)
(optional: 1 Tbs Canned pumpkin, or smashed banana)
1 Tbs flax meal (or 2 - if you want more dense and more fiber)
2-3 scoops of protein powder.
1 tsp of backing powder
pinch of salt
sweeteners if needed ( I use them if I want sweet pancakes and use 2 tbs flax meal + 2 scoops of protein powder)
mix the eggs with 1 Tbs of milk (or water)
mix the dry stuff together and add to the eggs. Add more water (or milk) if needed to make semi-liquid batter. I fry mine on a hot skillet that I spray with non-stick coconut oil spray. I use a cover for the skillet, so they get fluffy and cook nicely. The may be more dry - if you use egg whites.
To me - they are like bread like consistency - and I also make some savory (use unflavored protein) and add more salt, and some herbs or even garlic flavor.
They freeze nicely, and the also keep well in the fridge.
