My plan is working...I try to have protein shakes during the day, + 1 flax muffin - really filling - recipe below, and one meal per day.

Taking vitamins (pills) makes my pouch think I had "food"... lol...

As I am struggling to keep the calories down, and eat regularly, sometimes I get so hungry...
with my plan of protein shakes during that day and then one small meal... at 3 years out..the hunger is real...

When that is happening, I make a flax muffin or flax -protein 5 min muffin, and get "stuffed". Really. Here are the recipes:

2 versions of a 5 min flax muffin:  (you can an substitute for some of the items)

Flax muffin (low carb, high fiber)
1 egg+ sweetener (stevia) + pinch of salt
1 Tbs of almond milk (unsweet)
flavoring - vanilla or almond extract etc.
Mix that very well

dry ingredients:
1/4 cup of flax meal, 1/2 tsp of backing powder (mix that well)

Mix the flax mixture with the egg mixture.  I use 16 oz glass measuring cup. Let set for 5-10 min . You will see the batter rising - the backing powder works so fast. When the amount doubles - put it in microwave and nuke for 2 min. Invert on  a plate. (I usually make double qty) - lots of fiber, proteins.

2nd version:

Flax + protein muffin: (low carbs, high fiber)

2 eggs+ sweetener (stevia) + pinch of salt
2 Tbs of almond milk (unsweet)
flavoring - vanilla or almond extract etc.
Mix that very well ( I blend in a magic bullet)

dry items:
1/4 cup flax meal (ground flax seeds)
1 scoop of whey protein powder (I use ATW whey isolate)
1 tsp of backing powder (mix that well)

I use 32 oz glass measuring cup -  I put the flax+ protein mixture in the cup, then pour the egg mixture.  Stir it well with a fork.  Let set for 5-10 min . You will see the batter rising - the backing powder works so fast. When the amount doubles - put it in microwave and nuke for 3-4 min. Invert on  a plate. - lots of fiber, proteins.  Slice the (HUGE) muffin. I divide that into 2 portions - and eat one for one meal - when I get really hungry... It fills me up... literally...lol..

Try the flax muffin.  Really good and really filling.
Sometimes I add slivered almonds to the mix (just a 1 Tbs),

I slice the muffin and then eat that as is - or can top it with SF jam, or PB, or anything else...

I like to use a lot of backing powder - it makes the muffin consistency very fluffy and light.
Dry enough that takes me a while to eat one portion... and fills me up...for a couple of hrs...

The extra fiber may constipate you - so make sure you have good BM movement and add some more water or Magnesium to make sure you do not get constipated.

Post your ideas for a quick foods - that is easy to make, and helps with the hunger...

Hi Hala,
That really sounds easy and good.  I'm always looking for something different.  My "go to" food is ricotta cheese w/a dash of splenda.  I also keep a pitcher of vanilla protein drink available.  I just mix in my flavored jello or syrup for additional flavoring.

Kathy, do you stir in the protein powder after it's cooked?  How much do you use?

Today I'm going to try turning my menu upside down.  I'm eating vegetables and a hamburger patty for breakfast to see if it'll keep me full longer.
