Treat for the best - macaroon cookies

Just becasue we are on a good food path - it does not mean that we can have a treat once in a while.  I was home today and bake this. 

Trust me - these are as good as real macaroons (at least to me they are) and are high in proteins.  A bit high in fat - but that will help your BM and since these are coconut flakes - with RNY - we probably can't absorb most of that anyway.  But the taste is still there...

My recipe (for high proteins macaroons) :
2 cups coconut flakes
1.5 cup protein powder (vanilla - I used MRM brand)
1 cup egg whites
1.5 cup sweetener (or use 1.5 tsp liquid stevia)
1/2 cup raisins (optional - not using that would eliminate a lot of sugar)
vanilla or almond flavor

Mix all together.  Form cookies on cookie sheet.  Flatten with a fork to make the cookies thinner.  Bake at 350F for 10-14 min. Cool.
My recipe yields 28 large cookies, servings 3 cookies (app 65 gr ) app 200 cal,  with 17 gr proteins, 11 gr fat,  9 gr carbs, 7 gr sugar. 

Like a great tasting protein bar.  Low on fiber = but - can't have everything.  Great with coffee.
