Awesome Recipe for high fiber, complex carb

Hey everyone 

I am weird, I find something I like and eat it for months on end...complex carbs is a challenge for workouts and losing weight...  I love baked sweet potatoes with butter spray, splenda and cinnamon.

Right up there is my new addiction, love, love, love it and thought I would share... this is great with grilled chicken breast, grilled fish and shrimp also...

Couscous (I buy mine from Trader Joe's, wheat)
1) cook 3-4 shallots (or 1/2 to 1 onion), cook on medium heat for 10 minutes in 4 tablespoons of olive oil
2) add chicken stock instead of water for more flavor: 2:1 ratio of liquid to couscous. i use 3 cups chicken stock for 1 1/2 cups couscous.
3) add 1/2 teaspoon pepper, 1/2 teaspoon salt. boil.
4) turn off heat, add couscous
5) add as much cranberries (dried) or currants, almonds or pine nuts, and parsley (flat leaf/Italian) as you want!

Not only is this yummy but I eat it through out the week, it heats GREAT

Sounds good!  I like to add carrots to my couscous... I haven't had it in a long time!  Thanks for the reminder!

Ohhh, I love new foods.  I've seen a lot about being said about couscous.  Is it a noodle, pasta or a rice?  I'll have to go back to TJ's again today.  I went there twice yesterday, I LOVE TJ's...

Couscous is a coarsely ground semolina pasta. The grain is a staple in many North African countries.

Couscous is usually found in the rice section.....
