Atkins and Low Carb Weight Loss

Hi everyone,

I have been doing some baking experimentation - some successful, (Black bean chocolate cake, quinoa flour chocolate cupcakes, almond torte) others, well not so much (low carb bagels).

Have had good success using bean flours, nut flours, and quinoa flour for baking.

Have had no success yet in finding a good and tasty low carb bread or bagel recipe. (Spent a ton of time yesterday on a tray of bagels that went straight into the bin from the oven.) If anyone knows of something good - pass it on! I have no problems with gluten, but prefer as much real food as possible.

What are your thoughts on using erythritol / stevia mixes for baking or other sweetening? Eryithritol, while derived from vegetable sources, is nontheless a pretty refined product. I haven't found it to have any impact on my digestion, weight loss or blood sugars so far -so will probably continue to use it unless I identify a health reason to avoid it. I am also looking into oligofructose - a prebiotic that looks promising. I have some low carb chocolate chips sweetened with it and they are delicious, with no nasty maltitol.

Well, enough of my ramblings for this morning - would love any thoughts or feedback!

I have not lost any weight for about three months, so my diet will change over the next week as I reduce the amount I eat, especially fatty foods.

2 boiled eggs and a Ryvita
Last of the stilton butter and Ryvitas
Penultimate sausage and chestnut loaf
Chicken thighs (1 or 2)
1 Atkins bar
Coffee and fruit teas

If I don't lose any weight over the next 6 weeks I will start on a fat-blocking tablet...  I intend to eat more chicken and other lean meat and reduced fat cheese triangles instead of full-fat cheese.  6 or 7 Ryvitas a day.  I have tried sprouting seeds, all they do is make me throw up  LOL.  The only vegetables I can tolerate are grated carrot, peas and broad beans.  Might have to keep those for a Sunday treat!

Ohhhh .... the day started with breakfast in bed, prepared  by my ten-year-old.  NOT a low-carb meal by any means, but he sat and watched me enjoy every sip and morsel -- totally worth it!!!

Yesterday was dinner at an Italian restaurant -- managed to have antipasto salad and eggplant rollatini, probably lower carb than it would have been otherwise.  Also a glass of wine to make sitting down with so many children tolerable LOL.

Last week was an effectove Induction week, this weekend -- not so much.

Thanks ,Melissa. It is good to know I'm not alone,for sure. It is interesting,that after we left the faire,I went right back on program with dinner having no bun with my burger,and didn't even miss it or think about it. It ws like after the "special" event I automatically went back to plan. that is the best part to me,cause sometimes I take *days* to get back on plan

I can live with the occasional indulgence as long as I am able to get right back on track since I am addicted to carbs.

Hollykim,
We had a bunch of family over today and my best friend made a few of my favorites...I resisted the best I could but... that small peice of garlic bread covered in Mozzarella was screaming my name.
Started today with eggs and cheese, espresso and almond milk.
I think it's human to have a bad eating day once in a while. Better luck today!! Just know you are not alone!!!

W went to the Renaissance Faire with DD,DSIL,DGS and had a great time.

I passed up lots of stuff including kettle corn but caved at lunch when we ended up with 3 desserst at the table!
Fried snickers bar 2 bites
Fried marshmallows 1 bite
I don't even know how to count these!

Funnel cake 2 bites ACK!
B protein shake
L huge turkey leg shared with dh,few ff,and the above
S peanuts totally forgot to add these in the total GAH!

Here it is folks!

Breakfast here was upside-down pizza:  A bed of melted cheese, topped with marinara, then parmesan -- toasted for ten minutes.  Nearly no carbs, and all of the nbest parts of the pizza (the toppings).

Confession time....*oye...*

Let's see, it's Nurse's week PLUS cinco de Mayo....so yeah...we've had lots of crazy food at the hospital. Normally, I don't really care too much about junk food...but for some reason this week it's been harder than usual to refuse. Thankfully, I am getting over this quickly *as the scale has gone up 2 lbs*

Breakfast: Protein shake
Snack: 1-Baybel cheese
Lunch: 1 slice lean ham, 1 slice swiss cheese, 1.5 oz grilled chicken
* 1tbsp cake*  ------->  yes I know...bad....
Snack: Atkins bar
Dinner: 2 oz ground turkey, 1 tbsp shredded cheese, 1 tbsp sour cream, 4 tostito chips (ooops)

Throw in lots of water and diet snapple.

Cal: 1094  Carb; 35  Protein: 95

So yeah...this makes 2 days this week that I've actually hit close to 40 carbs, yuck!
Not only that, but I've indulged too much , for me at least.

Oh well, back to square one....20 carbs a day for 7 days to detox again.

I'm so glad to have this forum, in which I can air out my mistakes and regroup to make better decisions.
