I'm a little slow to catch on sometimes...so, I appreciate the help....

Chris's Indian Curry

Saute 1 lg onion ...set aside
Saute 1 green pepper ... set aside
Saute 8oz of sliced mushrooms...set aside

1lb of chicken...breast or dark meat if you choose.

Then add all the above ingredients with...

1.. 28oz can of tomatoes
Coconut cream to taste
Add Patak's mild/hot curry paste... Yummmy..

He does add fresh garlic when cooking the meat and other spices, I will have to get into the cupboard tomorrow and guesstimate...He says it's a secret!!!...I do make it too, but it's never as Yummy as his.

Simmer for a couple hours to reduce liquids.

Add 1/2lb of scallops about 10 minutes before serving.

Eat this over rice,  pasta, or a Patak's Pappadum with it. adds carbs though...



PS...We use beef with this a lot to and shrimp. Some times all together.

Here is a recipe that I found to make your own Atkins Baking mix:

1 cup soy flour
2 cups soy protein isolate
2 tablespoon baking soda
1 teaspoon salt
2 tablespoons Splenda

 

Recipe
Sift together then store and use as you would Dr. A's. It's much cheaper and things come out about the same.

3 carbs per 1/2 cup serving

Phoo-ie on correct form its just a message board.       

I like hormel pepperoni stix, 0 carb, travels well.  Same for babybel light cheese, also 0 carb and easy to carry.  

Single serving 100 cal pack, emerald cocoa roast almonds, 4 carbs and they come in other varieties too.  

A standby for me is pork skins.  I use them like crackers.  Mix a little cream cheese & smart balance light ( 2 / 1 ), add dried herbs/ seasonings to taste for a spread.

I wasn't going to track yesterday, but I ended up tracking it this morning for accountablity, just because I feel best when I do, regardless of what it says.

I decided before lunch yesterday that I was going to eat some carbs, being mindful of what I ate, then go back to induction this morning which I am doing, happily I might add.

B.  3 oz ground beef scrambled with 1 egg
L & D - was out to eat and had half for lunch and half for dinner
Hamburger w/1 tsp ketchup and 2 tsp mayo
1/2 of the bun

Calories - 796
Protein - 75
Carbs - 14

Scale is down 1.4 from last Monday.  We'll see what it says at Weigh****chers tonight.

Snacks:
I don't snack much because it's not on my plan but if I do:

2T of shredded parmesean cheese on a plate.  Microwave for 1 minute, let cool and it becomes like a cheese crisp.
String cheese
Babybel cheese
celery w/cream cheese
Protein Pudding from Vitamin Shoppe - Bodytech Dutch Chocolate - 25 grms protein - 4 carbs

Sweets:
If I'm going nuts for a sweet taste or dessert -  I take an ounce of cream cheese, let it get soft and add 1 packet splenda and perhaps a little unsweetened cocoa powder.

Protein Hot cocoa -
1 scoop Hydro Whey chocolate - 30 grams
4 oz almond breeze
4 oz water

Mix protein and water in blender ball bottle - shake until disolved
Heat almond breeze for 1 minute
Stir in protein mix
Micro for 30 seconds, stir and repeat until hot enough
Failure to stir every 30 seconds ends up in clumps of protein for me

tequila lime chicken wings, from sams club are great for a quick snack, or even as your meat for a meal  toss in microwave or in a convection oven,,,

I still use my greek yogurt alot, chicken salad, devilled eggs, chiili, stuffed peppers are great, make your own low carb pizza on low carb tortilla or flatout wraps,( i can only eat 1/4 of a wrap)
