I usually make a crumb crust with almond or hazelnut meal and sometimes add a bit of crushed Fibre One cereal.

146 is VERY good.

My HbA1C was 5.8 -- should be under 5.7, but oh well .... doing pretty well on that front, I suppose, and still not diabetic, thank goodness ....

I have no idea what 2.9 is for cholesterol, but if your doctor says excellent, go with that, my friend!!!

 Aww Lee -- I wish you would post!  We all really benefit from seeing how people really, truly, genuinely eat when they are going "low carb"

Honestly, I'm in maintenance, so I have berries, bananas, and the occasional piece of whole wheat bread or even a cookie or something now and then -- It isn't all about staying in Induction!!!

(Part of my joy at the lab result is watching the facial expression of my slender, athletic husband, as he finds out my cholesterol is astronomically LOW, while he has to be on statins ... snark, snark, snark!!!)

I've no experience baking with Stevia. But I use it as my primary sweetner in things like coffee and find it also has no noticeable impact on my blood sugar. I don't test; but I can FEEL the impact of other sweetners and I like how this one makes me feel.

I love to bake and would be happy to see any of your recipes!

New to this group; was interested in checking it out as I have been recently influenced by the work of Gary Taubes (Why We Get Fat; Good Calories/Bad Calories) to give this type of eating a try.

No idea what I'm gonna eat today but I"m off to reseach a bit of that now....

146 is about as good as it gets!  I wish mine was under 200.  My entire family was on cholesterol meds even though they were tiny people that never ate an egg or chicken skin etc.  I was on meds prior to surgery but not now.  We're keeping an eye on my labs to see what happens.

I haven't been posting my menus because I've been eating a little more carbs.  Mostly from fruit and veggies.  I seem to be letting go of these last pounds more easily with a little more carbs.  I never thought that would be my truth, but for today it's working. 

I'll keep checking in here to see how everyone is doing.

Trader Joe's has a great almond meal.  I recently used some mixed with flax seed meal and protein crisps to make some protein cookies.

Half way, YAY!!

2 boiled eggs and 2 Ryvita
1 Atkins bar
Up to 6 Ryvita and 6 light cheese triangles
Chicken leg and thigh
Coffee and tea.

I have difficulty interpreting US blood sugar and cholesterol results.  My last HbA1C was 6.5 and cholesterol 2.9 - both excellent for a diabetic, I presume that your figure of 146 is also good?
