B:  eggs, coffee with sugar-free choc syrup (sugar alcohols, huge huge mistake)
S:  sliced cheese
L: eggs and eggplant
S: nothing yet
D: lettuce-wrapped burger

Wasn't that interested in food today.

Yesterday was a great day and a bad day.  My husband got great news that his spot that they thought was cancer was benign.  However I ate terrible.  But today is a new day.

B - eggs and sausage patty
L - hot wings with ranch
S- green beans
D- brat patty with some veggies and cheese sauce

"Wednesday crabs" -- It's Wednesday here -- but I still don't have crabs!

(yuk yuk ...)

S: greek yogurt and raspberries
L: sliced cheese

D:  shnitzel

Okay, okay .... two servings of fruit, but I was at a boring meeting all day long and managed NOT to have any of the soiur cream cake or any of the cookies or .... you get the idea.

Also, got a nice little shelter doggie!  A miniature schnauzer mix!  She's a little neurotic, but very cute (so she'll fit right in with the rest of the family).

Okay, I like that Hala started a gratitude portion of the post!  My tally:  a wondrful husband, four great kids, my incredible mother is still living, I have friends, a fun job, and entertaining pets.  Yay me!

It is middle of the week.
My week didn't start well carb wise but I am getting there. One day at a time. Yesterday was a good day. Overall and carb-wise.

Today plan to have another good day.

Coffee + almond milk
2 cheese sticks
flax fake muffin ( a few bites, maybe)
lunch out - some Chinese... not sure what yet
liver + veggies
yogurt + proteins + flax
beef roast.

I also walked today, almost 3 miles, and plan to finish re-staining my deck (after work). The weather has been cooperating (finally) and I can finish what I started 2 weeks ago..
Life is good at the moment.: My cat loves me (she is so sweet), got a great BF, plan to go on a trip over the 4th july weekend...

it is yummy and so ridiculously easy!
1 cup raw almonds
2 cups filtered water---Soak overnight

Soaked almonds
6-8 cups fresh filteres water
Put half the almonds and half the water in a blender and whizz till you get tired of watching.

Strain the contents thru several layers of cheesecloth draped over a collander in a large bowl. (I lucked up and found an almond milk bag at a natural foods store once which I love)

Gently squeeze and drain all the liquid out. this is your almond milk. What is left in your cheesecloth is almond flour/meal. Use it in any way you would use store bought almond meal,but I keep mine in the freezer since it has no preservatives.

The milk is nothing like what you get in the store since it has no thickeners,etc.  Using 8 cups of water will give you a half gallon . For a video tutorial go to you tube and search homemade almond milk there are several there.
