Very good article.  I am nearly 4 years post op and have gained about 35 or the original 102 lost.  The carbs KILL me every single day.  I am hoping to get on track and this was a good article to explain things!

Middle of the week. 
Walked today but only 2.7 miles.
Eats today:
coffee + almond milk
protein shake
turkey with veggies
eggplant lasagna
cheese sticks

For me it is 2-3 days. Then maybe a week?   But then - I try to avoid splenda and sugar alcohols. SA affect me and my blood sugar.  But then most carbs do - even complex carbs.

I do eat carbs now, but not many.  Mostly fruits and veggies.. I may have some corn chips, but I do limit that to 1 oz.  Honestly - really do not want more than that ebven when I can.  
Last night I reached for a bad of chips... realized that really do not want any... and had a few nuts instead.

No really, how long?

For me, the first three days make me bat-sh*t crazy with desire to eat sugar.

Then, it's still bumpy for two more weeks.

Then, pretty smooth sailing until I encounter something really verboten and carbtastic, l**** chocolate-chip cookies, homemade, fresh from the oven (not my oven, I promise!)

Third day of back-on-induction, approached 20 gm net carbs, but did not reach it (unless we're deducting sugar alcohols)

B:  coffee with cream, string cheese, Atkins bar
L:  two Atkins bars*
S: chverry tomatoes
D:  handful of mixed nuts


I realize this is not healthy -- all the artificial protein bars -- but on a busy day, that's what I was able to muster!

I am tired today.  I did not sleep well last 2 nights. 
But I went for a brisk walk this morning - 3.6 miles. 
Eats will also be good

coffee + milk
cheese (I made but forgot to take my shake from home0
protein shake - will have to make a new one
beef + tomatoes
tzatziki sauce (home made)
Peruvian style turkey or eggplant lasagna.

S:  none
L: sliced turkey, sashimi
S: two protein bars (not healthy, but I was on the go)
D: a green pepper

New week... new day...
I did not sleep much last night.  My BF Gmother passed away so we were there till midnight.  ( I was there to support him) This morning, had a hard time to wake up.

But I cooked a lot of food over the weekend, so at least that is great.

Coffee + milk
3 cheese sticks
protein cake
more coffee + milk
beef + veggies (or protein shake)
yogurt + flax meal
turkey + veggies.
nuts or more cheese.

Plan to do low carb...

lol... I do not follow a recipe... and I use whey proteins (About time whey) to make the cake.

The simplest is same as for the flax muffin: 

1 egg, 1/4 cup protein powder. sweetener., 1 tsp almond milk, 1/4 tsp backing soda. To add some moisture - you can add 1 tsp oil or butter (melted) or coconut oil.  Mix all - microwave for 2-3 min. 

For a cake I used : (approximately)
2 eggs
1/4 cup almond oil
1/4 cup melted coconut oil
stevia (I used liquid - app 1-2 Tbs)

then mix 
1 cup protein powder with 2 tsp backing powder. 

mix the wet stuff, add the dry stuff and mix well.  needs to be a pudding like consistency. If too thick - add egg or egg whites, if too thin add proteins or flax meal.

Pour into backing dish... I dropped some cubed peaches inside. 
Bake at 375 for 20 -30 min.  

For cookies - I use the same base batter, then add fillers to make it thick: nuts, flax seeds, flax meal, protein crisps (see link).  Let it stand for 15-20 min. The flax meal will absorb some of the liquids - and then you can scoop the cookies on backing sheet and bake. 

I make a mixture of nuts seeds, protein crisps - the add to the batter as mixture. For cookies - need to add more sweetener. the fillers are not sweet - so need more to get sweet cookies. 
Pinch of salt is needed for the cake or the cookies. 

You can use splenda or splenda based syrups (Torani, DaVinci) as sweeteners (I can't tolerate splenda).  add flavors if you want.  Cake batter can be also make with nuts added, or with some fruits, or make as muffins.
