Topic: confused by carbs and net carbs, what do we count?
I just started Atkins on Monday and was very happy to see 3 lbs lost in the first 4 days.   I'm a little confused by the carbs count vs the net carbs.   Someone told me that we have to count all carbs not just net carbs to lose weight with the vsg.   Does anyone know anything about this?  I've just started reading the Atkins Book and its all about net carbs    color me confused :o(  jeani

Hi my name is Jeani i am 60 yrs old.  I had the sleeve surgery 9 months ago and have lost 70lbs.  I've been stuck for about the last 4 months,  first at 180 for a couple of months  now at 173 ish for the past couple of months.  I was a fat child,  then i lost all the weight.   Then when i was 34 my husband passed away and slowly but surely i crept up to 240.  I have arthritis and severe pain caused me to look into WLS.  Since the surgery my pain is almost non existant.   I have been in a stall because i got off track and ate pretty much whatever i thought i wanted (my bf of over 30 yrs died last November and i just went into a major funk).    I was playing around on youtube and saw some low carb videos,  then i logged onto atkins.com and have been researching and started atkins on monday.  Today is day 5 and this morning per my scale i have lost 4 lbs.   I'm very excited to lose this last 20-30lbs.  I just happened to see this board on a link in another post and thought i'd love to be able to talk to people that know something about this way of eating.  I'm a little confused,  people that i have talked to on here say do low carb but also do low fat,  but the literature on atkins says we need the fat :o(  any advice would be greatly appreciated.   :o)  jeani

My favorite low carb, high flavor treat is pepperoni.  I put it between 2 pieces of paper towel and nuke it for about 45 sec and yum.  All the flavor, most of the fat melts away. 

I haven't tried those peanut butter cookies yet but I have some peanut butter chocolate protein powder that I need to find some more uses for and I think that would work.

Topic: CARb Accountability Thread -- Weekend Edition!!!
Hey everybody!  Watcha eatin' this weekend that's low-carb-tastic?

I have fewer kids home this weekend than usual, so I am hunkering down with a huge stack of books, lots of frying-cheese and marinara, and a pile of low-carb peanut butter cookies -- recipe on the recipe thread, they are infinitely better than expected!!!!  Now I want to experiment with low-carb brownies -- anyone tried that yet?

Today's tally (keep in mind I'm at maintenance, so fruit and an occasional glass of wine are trivialities):

During the day:
Eggs hollandaise with spinach (I know -- shocking)
Protein shake with frozen banana
Cheese sandwich on homemade protein bread (using only wheat gluten, no flour)
Peanut butter cookies -- sugar-less
And tonight:
Vegetable soup
Roasted chicken
Kabocha squash
Green beans in tomato sauce
Hummus and eggplant salad
A glass of white wine

Well, I can confirm that the low-carb peanut butter cookies did the trick for me -- WHEW!!! 

I want to find out how people are going about making their own meat jerkies -- Any tips?

Friday 0830.  My plans for the day are:

2 rashers bacon with 1 scrambled egg and 1 ozs cheese
6 Ryvita with cheese triangles
1 tub cottage cheese with pineapple
2 Atkins bars
Coffee and fruit teas, maybe a 40 calorie hot chocolate drink....

Perfect timing on this one.  I too am under extra ordinary stress right now and today I just caved in to it.  Late afternoon, before pilates class I ate an Atkins bar. I haven't had a protein bar since I started low carb on January 10th.  I had ordered those three free bars and had the peanut butter one in my desk drawer.  It had 22 carbs, 10 fiber, 10 sugar alcohol.  Truth is, it's 7pm and I'm not hungry at all.  I'll probably have some cucumber slices and asparagus for dinner at this point.  It wasn't the worst damage.  I didn't go across the street from the office to buy nuts or anything else.  I'm pretty good about not going out in search of things because I really try to stick to what I wrote down as my plan for the day.  I was supposed to have a protein pudding last afternoon but sub'd the bar instead.

I want to keep some cucumber slices at work as well as maybe some organic turkey jerky.  I know that nuts are NOT my answer for stress eating.  In a perfect world I'd go outside to walk, breathe and meditate, but my world isn't perfect... YET!

I'm so sorry you're feeling stressed out Lisa.  Anything I can do to help?

Low Carb Peanut Butter Cookies

If you are thinking "yippee, real peanut butter cookies just like Mom used to make" -- - NO. 
But if you are thinking of a sweet yummy treat that is REMINISCENT of your childhood peanutbutter cookies -- These are for you!



1 cup peanut butter, any kind really
1 cup artificial sweetener, you decide which kind
1 teaspoon vanilla
1 whole egg
1 pound of melted milk chocolate.  I'm kidding.  You don't use this.


Preheat oven to 350oF.
Combine peanut butter, sweetener, vanilla, and egg until smooth.  Drop by the spoonful onto a Pam-sprayed cookie sheet, and bake for 12 minutes or until set.
