MSW thank you for starting this thread!

I find that for non-cooks and/or single/couple cooks, the key is usually SPEED OF PREP, and using just a FEW INGREDIENTS.  So in the end, it boils down to a quick, reliable technique.  Here are my best tools:

1.  FAGOR Pressure Cooker (available in small sizes, just 4 quarts, and extremely well made):


The next great piece of equipment that I own is a very small, Rival 2-quart crock pot:

And here is my other great tool for making well-balanced, little-prep healthy meals -- a microwave stack cooker:

In all cases, I spend a little time preparing whatEVER meal comes to mind, and then freeze, freeze freeze. 

Have I mentioned that I'm a huge fan of freeze-to-cook and freeze-to-reheat meals?  This is a method that really works well for people who want to eat healthfully but don't like to cook or have much time. 

So .... prepare a simple but healthy meal once, and eat (out of the freezer) three more times!

WANTED:  RECIPES AND IDEAS FOR FOLKS WITH MINIMUM CULINARY SKILLS!

We've got members dedicated to a low carb lifestyle.  However, a few of us are doomed to shakes and dishes of greek yogurt because cir****tances permit only minimum cooking.  Lets help these folks out with recipes, tips, ideas etc that can be made appetizing by even the most challenged in the kitchen. 

Please post your easy to fix low carb dishes and meals.  If there is a recipe you've already posted, be kind enough to copy and paste it in this thread too.  Same for any new easy low carb offerings.  

Let's help others enjoy the low carb lifestyle without over reliance on supplements.  With everyone's support, even those of us not familiar with the workings of a kitchen can do this.

  Here's to enjoying the low carb lifestyle.  Now lets all post at least one idea tip or meal option for the non cooks out there!

I find that thinly sliced boneless pork chops are easy and delicious.  Pan frying a couple mins on each side does it.  Serve that with some pre washed bagged salad and your choice of salad dressing and you have a great low carb meal.

Pealed deveined shimp are also fast and wonderful.

Goya makes some great all purpose seasonings that go great on meats, veggies, and seafood.  Just sprinkle a little on whatever you are cooking.

I love to bake different low carb veggies in the oven with a little seasoning and olive oil.  Cauliflower and onions are favorites.   You can also bake low carb veggies with some chicken legs all at the same time, very easy.   One pan and you don't have to watch it closely.

Here's my easy offering: Pre made seasonings for lots of flavor with little work and no skills. 

Seasoning bags.  They come available for oven or slow cooker and for all types of meats. 
Rinse the meat and toss it in the bag with the seasoning packet and usually a little water.  If you want higher fat then add a little oil too.  Bake or slow cook as instructed.  Many can be easily exprimented with for variety like adding a pint of fresh mushrooms or other veg.


Ethnic seasoning and spice packets for meats.  Same principle without the bag so clean up is a little less quick.  Usually pan cooked but the easy option is yours. 
The reynolds wrap folks make both oven and slow cooker bags you can use with these pakets if you'd rather bake or slow cook than follow the instructions.


Side dish seasoning packets for potatoes, rice, or pasta. 
Flavors like alfredo sauce, pesto, garlic & herb, etc work as well on veg like turnips, green beans, mushrooms...  Simple seasoned veg flavored like starchy carbs without the carbs.


Condenced soups. 
Cream of mushroom, broccoli cheddar, and many others poured over meat and veg make a simple one dish meal bake. 


If you're cooking for one, portion and freeze as soon as left overs cool rather than refrigerate.  Re heat slowly in microwave not fast on high.  This way foods don't taste frozen and reheated.  Each meal can have that fresh cooked flavor.


Also, read lables carefully.  In most cases the total carb count will be negligible once divided by the number of servings.

Thanks MrBigJ for helping us realize there is low carb need we can better serve as a group.  I bet there are others out there also trying to keep the kitchen duties light and easy.

It is going to be a high calorie - low carb day for me.

B:  Egg, 2 slices bacon, cheese stick, jicama
S:  chicharones
L:  Big Burger (no bun), jack cheese, tomato slice
S:  seaweed wrap, ham, cheese stick, sprouts, pickled ginger
D:  shiritaki noodles and really meaty spaghetti sauce

maybe a protein shake for late night snack

Wish fats were closer to the 45-50% range but I'm just not feeling them.  Hopefully tomorrows ratios will be better.  Today's high carb count is all good cause its mainly sugar alcohols from sf chocolates.  Net carbs are near enough to 50g and prot is really up there so I need some extra water tonight.
