Girl,no,cook it for ONE minute,lol or my micro takes 1min 30 sec. but NOT 3 or 5 min,lol. One ...just ONE! :)

As far as fruits, any of them are too many carbs fro me but I am super sensitive so someone else will have to address tht one,sorry. good job on getting back on track and I don't worry about fat on Atkins.

For me the best fruits are berries: blackberries, strawberries, blueberries, kiwi.   Any other are rather iffy.  When I do eat any other fruits, then I consider that " carb splurge"
Yea... 5 min - you will get a brick. I use 3 min for 2 x the recipe (2 eggs, 1/2 cup flax meal, etc). 
maybe 2 for one egg. 
Also - if I want a bit moisture - I use 1- 2 tsp of almond milk for one egg mixture. 
Watermelon, cherries - are consider a high carb fruits.. once I star eating them - have a hard time stopping. Watermelon is a lot of water + sugar.. and so little fiber - that I dump on it almost anytime I eat that (in the past)

You may pick fruits based on their glycemic index - glycemic load value - or how your body reacts to it.   (sometimes the body does not care about numbers and do whatever it wants to do).
