Wednesday, halfway through the weekly grind.  I have next week off, so I'll be preparing food for weeks ahead and freezing it.  Also I'm going to try salads again - wish me luck!

3 boiled eggs
2 Atkins bars
Ryvitas with light cheese triangles
Chicken leg and thigh
Cottage cheese with pineapple

Fifteen months postop - I'll weigh this weekend and decide whether I need to try something new or restrict my intake further....

Wow, I'd like to be done with Wednesday, right now!!!  (It's Tuesday evening here.)

So you won't like this ... have you thought about maybe eliminating the pineapple with the cottage cheese, and possibly the Ryvitas?

No more cottage cheese from the end of this week.  Ryvitas are no more than 40 grms carbs a day.  My doctor doesn't want me to eat less than 40 grms carbs a day.  I'm a man, I know my place...

I think you're so lucky in the US as the market is bigger so you have more choice.  I will have to get hold of a peanut butter cookie recipe soon as I have to give up cottage cheese and try to cut down on my Ryvitas...

That is true though we still have to choose carefully cause so much stuff has things we don't want/need to eat in it.

here is my peanut butter cookie recipe:

1 cup peanut butter of your choice
1 cup Splenda or sweetener of your choice (Stevia didn't work for me)
1 egg or 1/4 cup substitute
1 tsp vanilla flavor(I usually just use water)
Mix all and drop spoonfulls onto ungreased baking pan. flatten in a criss cross pattern with fork dipped in sweetener. bake at 350 degrees for 8-10 min. cool slightly before removing from pan

With egg: cals 102 Pro 4 Fat 9 Net carb 2 Sugar 1 Sodium 86
With egg sub  Cals 97 Pro 4 Fat 8 Net carb 2 sugar 1 sodium 81

For some reason they don't taste as good to me if I don;t flatten them so do take the time to do that.

Paul,
I make the flax muffins not with sweeteners but with salt pepper and spices.  Cut them into thin slices, and let it dry out, or even toast them more. Store them and use that instead of any bread - English muffins, for cheese, meats, etc.

just in case you do not remember: the flax muffin
1 egg + 1 tsp water
2 oz flax meal
1/2 tsp backing powder.
salt and pepper (and other spices).

bit the egg with water, add flax meal, backing powder and spices. mix well. Nuke for 2-3 minutes.  Once it is done - invert on a plate. Wait until all dry.  Cut into slices.
I usually make double and nuke in a glass 16 oz measuring cup.  Then cut slices and leave them outside in the house all day on a cooling rack.  Then pack into bags and store in a fridge
