Atkins and Low Carb Weight Loss

Hi everyone! 

I found this recipe for lemon pie that uses a premixed lemonade mix (like Country Time) and sugar.  I'm going to substitute with SF lemonade and Splenda.

Now - it calls for putting it in a pie crust.  What else could I use to reduce/eliminate the carbs?  Its not going to set up enough to not have a crust of some sort.

Any ideas are appreciated!

That sounds yummy!!!

I might try making a crust out of almond meal (using a graham-cracker-crust type of recipe, since it won't "stick" together otherwise).

Please, will you let us know how it works?

Well... I didn't find the SF lemonade mix - I bought a container of Crystal lite but it wasn't nearly enough, so I had to use the sugar added lemonade mix - BUT - I did use Splenda.

So far so good - it tastes yummy. I used a regular pie crust which looks weird - it fell into the pan while baking... lol.  oh well. 

Next time I'll try something else.  This actually was a mix where you premix the dry ingredients then when you're ready to make the pie you add the rest (eggs, cornstarch).  It makes a lot - I really wish I could have found the SF lemonade, but it was a small local store.

I used almond meal when I was making cheesecake for the holidays.  It makes a great crust, not low cal, but low carb.

Trader Joe's has a great almond meal.  I recently used some mixed with flax seed meal and protein crisps to make some protein cookies.

I usually make a crumb crust with almond or hazelnut meal and sometimes add a bit of crushed Fibre One cereal.
