I just got a food dehydrator as a gift... Has anyone tried making their own jerky?

Any tips?

I did this many years ago using a regular oven and dishwasher-sterilized window screening (decidedly low tech but it worked).  

The recipe:

Roast beef, sliced extremely thin by the butcher
Soy sauce, seasoned (probably splenda and/or garlic and/or pepper sauce)

     Marinate the beef in seasoned soy sauce for about an hour; then place in dehydrator and let 'er rip!  If using  window-screening and a regular oven, place the beef one-layer deep on the screen, with foil beneath.  Heat in oven on very lowest setting (about 150oF) for roughly forever (my oven it took about 8-10 hours).
     Theoretically it does not have to be refrigerated, but I'm a little compulsive about germs so I always did.  It lasted forever, because the kids found the expensive PACKAGED stuff more appealing, and only my husband and I ate it.

One word of warning for those who have had WLS -- this is a dehydrated product and will expand when it hits mmoisture (like a pouched or sleeved stomach).  Use caution, as you would with rice or dried fruit -- This stuff can create blockage if you're not careful, and sometimes even if you are!
