CARb Accountability Thread -- Weekend Edition!!!

Hey everybody!  Watcha eatin' this weekend that's low-carb-tastic?

I have fewer kids home this weekend than usual, so I am hunkering down with a huge stack of books, lots of frying-cheese and marinara, and a pile of low-carb peanut butter cookies -- recipe on the recipe thread, they are infinitely better than expected!!!!  Now I want to experiment with low-carb brownies -- anyone tried that yet?

Today's tally (keep in mind I'm at maintenance, so fruit and an occasional glass of wine are trivialities):

During the day:
Eggs hollandaise with spinach (I know -- shocking)
Protein shake with frozen banana
Cheese sandwich on homemade protein bread (using only wheat gluten, no flour)
Peanut butter cookies -- sugar-less
And tonight:
Vegetable soup
Roasted chicken
Kabocha squash
Green beans in tomato sauce
Hummus and eggplant salad
A glass of white wine

dinner low carb cauliflower pizza
snack protein shake
total carbs 50

Saturday:

2 rashers bacon and 1 scrambled egg
1 pot cottage cheese with pineapple with 2 Ryvita
2 Atkins bars
Egg and mushroom omelette
Coffee and tea

Sunday:

2 rashers bacon and 1 scrambled egg
1 pot cottage cheese with pineapple and passion fruit and 2 Ryvita
3 ozs beef with 3 ozs vegetables 2 Tsp gravy
2 Atkins bars
Coffee and tea.

It's been awhile since I've been online.  Bought lots of veg so carbs will rise but I need the variety right now. 

Update:
My day is definetly not lc.  Offending foods are in italics.  They more than double a normal 'high' carb day for me once you include my usual veg.  Its well past my limit in % of total calories and in grams. 

roast beef, green beans, almond milk mocha

1/3 serv applebees riblet basket (meat only), pork shoulder blade roast, spinach, green beans, almond milk cocoa

apple, pear, plain popcorn, decaf sf sweet tea

dinner likely a chicken breast cause its already cooked but I'll hold off on the veg and be daring with some ff cottage cheese served with benadryl and an asthma inhaler, lol.  I still need another quart to get my liquids down.

I will not eat all my calories for the day but that won't save me from the scale in the morning.  This many carbs will be waiting to show its @$$ bright and early unless I run h210k tonight.  Not going to happen.

Okay, weekend edition has been mostly sandwiches made with high-protein bread --

For those of you who make your own bread, I can share from personal experience that substituting wheat gluten for plain wheat flour produces a very nice loaf, and about 75% of the calories are protein.

So today was:

2 poached eggs with high-protein bread
Coffee (there's always coffee)
Chicken sandwich on high protein bread, with mayo and avocado
Mandelbread (just one, but it was worth it)
Chicken curry


Ta DAAAAAAAAAAAAAAAAAA!!!!!

Do you add the wheat gluten to your bread cup for cup of wheat flour? Do you add something to make the protein higher?

S double protein cocoa/soy milk

I have an egg-bread recipe, I think the ratios are thus:

3 whole eggs
1 tablespoon salt
(1/2 cup sugar or equivalent)
5 cups gluten (pricy, but worth it)
1/4 C oil
1 packet yeast (1/3 of a strip)
1 C + 2 tablespoons warm water

It goes into the bread machine, and when I wake up -- there's bread!!!

can't remember exactly when I did the calculations, but I think it was something like two parts protein to one part carbs, and I never keep track of fat.

Makes a very dense, chewy loaf.  But I don't get that white-flour blah happening to me afterwards.

It's taken six weeks of stalling, but I'm finally ONE POUND down on my scales!!!!  Must have a biscuit (LOL).
