What a GREAT dinner!

I have some Harris Ranch Potroast with Gravy, very good, but was wondering how to make it more interesting.  Plus I've been wanting to incorporate more veggies into my meals.  So I carmelized some mushrooms, onions and pepper flakes in a little butter, added garlic, white wine, and a touch of glace that I get from Bristol Farms, and cooked them down till the liquid was gone.  DAYUM that went good with the pot roast!  And good stats too.

I love the Atkins way of eating, I tell ya!

Sounds great.  Mushrooms and onionsa are my favorite veggie to add with beef.

Thanks Lee.  I think I have been drug here kicking and screaming.  Although I like this way of eating for the most part, part of it feels like a diet and I vowed to not have to diet again after surgery.  However, it is working and the scale is moving and that is a very good thing.

You've had a fabulous recovery.  What you've been doing seems to be working for you?  My favorite motto is... if it's not broken, don't fix it.

Do you feel like you slowed down and want to eat lower carb to help get to goal? 

For me, I just plain feel better without the white stuff.  They all make me crave more food.  I can do ok with things like a whole wheat low carb tortilla occasionally but give me a white one and I want the entire bag, topped with a pound of cheese of course.    You get what I mean.

I'm delighted to see you here, regardless of why.  :)

yeah, I only lost 4 lbs in Jan and I felt like I was too early out to slow down that much.  So this will kick it up anyway.  I don't crave carbs.  Never have.  But I want to keep losing, right on past my original goal of 140 to a normal BMI and if it take low carb, I'm there.

Starts around 128-125 depending on if I am 5' or 4'11"

Hi Kathy,
I recently posted a review of this product because I love it.  I get it at Costco for I believe $4.99 a pound.  I need to remember to find the smallest ones because I often have to throw out the last serving or two because I get tired of eating it so many times in a week and I forget to freeze it.

I like steaming up a bag of Trader Joe's organic green beans and adding it to the pot roast for individual servings.  I like the fiber that they add and also the greenness of them. 

What you've done sounds delightful.  Maybe I'll try that if company is coming.  It sounds delish!

I love the Atkins way of eating too.  Sometimes i just have to remember to change things up.  Living alone and cooking for one, I tend to have the same things over and over and over....  :)

Lee. Looks like we both love Costco. Have you discovered the Wild salmon steaks - marinated and individually frozen? I love them.  I get so many things from Costco that make my life so much easy (cooking for one).
