Homemade Atkins Baking Mix

Here is a recipe that I found to make your own Atkins Baking mix:

1 cup soy flour
2 cups soy protein isolate
2 tablespoon baking soda
1 teaspoon salt
2 tablespoons Splenda

 

Recipe
Sift together then store and use as you would Dr. A's. It's much cheaper and things come out about the same.

3 carbs per 1/2 cup serving

Thanks,Robin,wanted to make sure it was 2 CUPS soy protein and not 2 Scoops.

I tried it and it worked, but the muffins I made were a little rubbery.  I thought about the cups vs scoops too.  Maybe I'll try some with 2 scoops instead and see how it works.

Yep,that is what it said. let us know when you try with two scoops. I m going to try it also and se what I come out with.
