You are right in understanding the importance of trying to figure out what you are doing.
We usually recommend that new members take a look at the "stickied" links at the top of the discussion thread list. The most important is probably the "Starting Point," and I suggest you look there. You will find that there are many, MANY good low-carbohydrate programs, but it is important to understand their recommendations, first.
You are right, there is more to low-carb than just keeping your grams to under 20!!!

Unfortunately the head issues that lead to grazing are not covered by low carbing any more than they are aided by wls. Eating all the time and sticking to atkins induction level carbs are separate issues.
Each person has their own approach. Do you track your food intake? Do you know how many calories you should eat to loose and/or maintain? Do you exercise and monitor the calories burned?
Check the getting started thread. Read about various types of low carb plans. Decide what feels right for you and how you want to monitor your progress. How detailed you are is your choice.
