Cinnamon Muffins!!!

Just swiped this off of the main board, tried it -- and yummy! 

ONLY ONE NET CARB!!!

1/4 Cup Flaxseed Meal 

1/2 teaspoon Baking Powder

1/2 teaspoon cinnamon

1 tablespoon Splenda (optional)

1 egg


Mix everything together in a coffee cup. Cook for one minute in the microwave. Turn the cup upside down to take the muffin out. If it looks wet, let it sit for a minute or so. I have these for breakfast. You can add blueberries, or try other additions. Some people add a tablespoon of cream cheese before cooking.

I am loving these muffins! Thanks for sharing! The only thing is...they oughta come with a warning...may cause gas and other unpleasant effects! The other day I ate one and had horrible gas and lower abdominal gas pains shortly afterwards. However; they do a great job if you are "poop challenged"!!! haha!  ;-)

Omigosh Snowbaby -- I was slow to see this!  You're right -- definitely a low-carb but HIGH FIBER treat!!!!

 Chicken Mac & Cheese Bake

2 cups of macaroni (I use Atkins penne)
3 Tbs. butter
2 Tbs flour (I use Atkins baking mix)
1/2 tsp salt
2 tsp onion powder
1tsp hot sauce
1 tsp pepper
2 cups milk (I use Almond milk)
3 small chicken breasts (cooked and baked)
8 oz cheddar or Colby Jack cheese (2 cups shredded or cubed)

Preheat oven to 350 degrees 

Spray 1 1/2 qt casserole dish with nonstick spray

Cook macaroni in salted water according to package directions but reduce cooking time by about 5 minutes

Melt butter in a medium size sauce pan.

On medium-high heat, blend in flour, salt and pepper. Stirring constantly while slowly adding milk

Reduce heat to medium and continue to stir mixture until it is thick and bubbly

Add the chicken, hot sauce and cheese.  Stir until melted

Mix with the cooked macaroni and turn into the casserole dish

Bake in preheated oven for 30 to 35 minutes

Stall-breaker!!       Hamburger Pie (Whooshie Pie)

2lbs of ground beef(lean)
1- 8oz package of cream cheese
2 tsp yellow mustard
2 tsp horseraddish
garlic powder to taste
salt and pepper to taste
dehydrated onions to taste

Split hamburger into 2 large patties.
Season with salt and pepper, place 1st patty in round pan,
mix remaining ingredients and put over patty,
then top with 2nd patty and seal edges by pinching together.
Season top patty. bake 350 55 min

My whole family loves this.  It tastes like a lasagna meatloaf without the noodles.  It is thought to break stalls and it seemed to break one for me, one time.  Who knows? But either way, we like this one.

Twice Baked Cauliflower
(6 servings, recipe adapted slightly from The Low Carb Gourmet.)

1 large head cauliflower
4 oz. low fat cream cheese (do not use fat free)
1 T butter (optional, original recipe called for 2 T and next time I would leave out the butter)
1/2 cup low fat sour cream (do not use fat free)
1/4 cup minced green onions
1/4 cup freshly grated parmesan cheese
6 slices bacon, cooked very crisp and crumbled
1 cup reduced fat sharp cheddar cheese
(I used Kraft 2% milk sharp cheddar)

Preheat oven to 350 F. Cut out stem and core from cauliflower, and cut into small pieces. Cook in large pot of boiling water until cauliflower is tender, but not overly soft. Drain well and mash with potato masher, leaving some chunks. Mix in cream cheese, butter (if using), sour cream, green onion, Parmesan, and 3/4 of the bacon.

Spread evenly in an 8 X 8 inch glass casserole dish. Sprinkle with cheddar cheese and reserved bacon. Bake 30-35 minutes, or until hot and bubbly.

South Beach and Low Glycemic Suggestions:
Even with less fat due to low fat cheese, cream cheese, and sour cream, less bacon, and no butter, this recipe should be a "once-in-a-while" treat for the South Beach Diet since all the fat is saturated fat. Serve it with lower fat dishes such as Grilled Tuna with Cherry Tomato Salsa. Cauliflower is very low on the glycemic index, and should be a good choice for any low-glycemic eating plan.

Stuffed Cabbage Casserole

This is a variation of recipes I've seen on low carb websites.

1 pkg coleslaw (shredded cabbage)
2 lbs. ground beef
2 cans petite diced tomatoes (do not drain)
2 cans tomatoe sauce
oregano
garlic (I use three cloves)
two onions (chopped)
2 - 3 cups shredded cheddar

Put cabbage in large glass baking dish that's been sprayed with Pam. Sautee onions, garlic and ground beef; drain; add tomatoes, sauce and spices. I let it simmer for a few minutes. Put beef/tomato mixture on top of cabbage, cover with foil and bake for 45 minutes at 350. Remove foil, top with cheese and continue baking for another 15 minutes or so.

We love this casserole!

Low Carb Peanut Butter Cookies

If you are thinking "yippee, real peanut butter cookies just like Mom used to make" -- - NO. 
But if you are thinking of a sweet yummy treat that is REMINISCENT of your childhood peanutbutter cookies -- These are for you!



1 cup peanut butter, any kind really
1 cup artificial sweetener, you decide which kind
1 teaspoon vanilla
1 whole egg
1 pound of melted milk chocolate.  I'm kidding.  You don't use this.


Preheat oven to 350oF.
Combine peanut butter, sweetener, vanilla, and egg until smooth.  Drop by the spoonful onto a Pam-sprayed cookie sheet, and bake for 12 minutes or until set.

REAL High-Protein Bread -- This actually tastes quite good!  I make one recipe and it lasts me for weeks (32 servings per recipe).
