RECIPE THREAD!
Chris's Indian Curry
Saute 1 lg onion ...set aside
Saute 1 green pepper ... set aside
Saute 8oz of sliced mushrooms...set aside
1lb of chicken...breast or dark meat if you choose.
Then add all the above ingredients with...
1.. 28oz can of tomatoes
Coconut cream to taste
Add Patak's mild/hot curry paste... Yummmy..
He does add fresh garlic when cooking the meat and other spices, I will have to get into the cupboard tomorrow and guesstimate...He says it's a secret!!!...I do make it too, but it's never as Yummy as his.
Simmer for a couple hours to reduce liquids.
Add 1/2lb of scallops about 10 minutes before serving.
Eat this over rice, pasta, or a Patak's Pappadum with it. adds carbs though...
PS...We use beef with this a lot to and shrimp. Some times all together.

Lemon Cheesecake (makes 12 servings / Per serving: 213 cal / 17 g fat / 7 g protein / 2 g carb / 0 fiber)
Ingredients:
1 (3-oz) pkg sugar free lemon gelatin
2 (8-oz) pkgs cream cheese, softened
1/2 cup Xylitol
1/2 cup sour cream
1/4 cup heavy cream
Thoroughly mix the gelatin with 1/4 cup boiling water, stirring until dissolved. In mixing bowl, combine remaining ingredients and beat until smooth and light. Add gelatin and beat until smooth. Spoon into a lightly sprayed 9 inch pie dish and chill 4 hours until set.
Regular Cheesecake
Makes 16 servings (Per Serving: 233 cal / 21 g fat / 6 g protein / 1 g sugar / 5 g carbs / 0 g fiber)
*For a Smooth Cheesecake, important to have all ingredients begin at room temp*
3 Tbls graham cracker crumbs
3 (8-oz) pkgs cream cheese, softened
4 large eggs
3/4 cup puls 1 cup sour cream
1 cup Splenda, plus 1/4 cup more (can reduce carbs by 2 per serving by using Xylitol---texture will be different, though)
4 Tbls lemon juice divided
Preheat oven to 350*. Lightly spray a 9" springform pan. Add graham cracker crumbs and rotate to cover bottom and sides. Beat cream cheese until smooth. Add eggs, one at a time, and mix well. Add 3/4 cup sour cream, 1 cup Splenda and 2 Tbls lemon juice. Mix until smooth. Pour into pan and bake 35 to 40 minutes until "just firm" (the center should still jiggle just a little). Combine 1 cup sour cream, 1/4 cup Splenda and 2 Tbls lemon juice. Gently pour over baked cheesecake and spread over top. Bake 5 minutes. Place pan on rack and cool. Cover then chill
The recipe that follows is as I made it, flawed frosting and all. I used special dark cocoa but natural cocoa will do just as well.

LOW CARB SUGAR FREE CHOCOLATE BROWNIE CAKE

INGREDIENTS
3/4 cup smart balance light
3 large eggs
1 1/2 cups splenda
1/2 cup GNC unflavored protein powder (54g; 2 scoops=56g)
1/2 cup Hershey's unsweetened cocoa powder
1/4 cup Bob's Red Mill low carb bake mix
1/4 cup flax meal
1 tsp baking powder
2 tsps vanilla extract
DIRECTIONS:
PRE HEAT OVEN TO 350 DEGREES
MELT SMART BALANCE LIGHT
BEAT EGGS AND SPLENDA TOGETHER
MIX TOGETHERR REMAINING DRY INGREDIENTS
ADD VANILLA TO EGG MIXTURE
ADD DRY INGREDIENTS A LITTLE AT A TIME BEATING AFTER EACH ADDITION
ADD COOLED MELTED SMART BALANCE LIGHT A LITTLE AT A TIME BEATING AFTER EACH ADDITION
SPRAY 11"x7" PAN WITH NO STICK SPRAY
POUR BATTER INTO PAN
BAKE APPROX 20 MIN UNTIL TOOTH PICK COMES OUT CLEAN AND CAKE BEGINS TO PULL AWAY FROM THE SIDES OF THE PAN.
FROSTING
2 oz fat free cream cheese
1 tbsp Hershey's unsweetened cocoa powder
1 tbsp splenda
1/4 tsps vanilla extract
LET CREAM CHEESE SOFTEN AT ROOM TEMPERATURE
MIX ALL INGREDIENTS
SPREAD ON COOLED CAKE
CUT INTO 12 SQUARES

Zucchini Doritos-style chips
2 eggs
2 cups cheese
Preheat oven to 450 degrees F.
Grease 2 cookie sheets.
Cut ends from zucchini. Shred. Mix with egg and cheese. Make 6-8" circles on greased cookie sheet(s). Bake at 450 degrees for 12 minutes. Loosen and flip the circles. Bake for another 5 minutes at 450 degrees.
With a pizza cutter, cut rounds into triangles (about 6 per round).
Let cool on a rack for 6-8 hours in a cool oven. To store, keep loosely in a bag or a plastic container in the refrigerator or on the counter. Best used within a week of preparation. After chips have dried substantially, in a plastic container toss with popcorn seasoning for desired flavor.
Makes 36 chips.

FLAX PANCAKES -
3/4 c. flax meal
¼ c. vanilla whey protein
¼ c. cream
¼ c. water
1 beaten egg
pinch salt
¼ tsp. each baking powder and baking soda
DIRECTIONS: Mix all ingredients. Using ¼ c. measuring cup not quite full, pour onto hot, oiled griddle to make 6 pancakes. When the batter begins to rise up a bit and are browned to your liking on first side (about 2 minutes), flip and coo****il second side is brown. Serve at once with butter and sugar-free maple syrup.

Bake 1 oz mounds of cheddar cheese until they bubble and just begin to brown.
(oven 375 deg. - must use parchment paper!!!) Allow them to cool down. Remove from parchment paper.
Take one cheese round and put mayo or whatever dressing you prefer and top with cold deli meat. Fold in half (like a taco) and enjoy!!!
I like putting horseradish sauce and cold peppered eye of round deli beef on mine Awesome!!!
