Jill, you have great suggestions here.

Early out from surgery I ate a lot of the burrito bowl type creations.  I haven't been doing it as much in the last few months but I went out of bought more ground beef and sour cream so this is definitely going back on the food rotations.  It's so quick and easy to do.

I love the idea of making a sandwich using cheese slices.  I have some jalapeno jack cheese slices that have just been sitting and need to be eaten.  I bought so ham at Trader Joe's the other day that will be perfect for this.

Salad bowls, I love them as well without the veggies.  That way I don't have to eat around all the lettuce that just takes up space in my little Sleevie.

I freeze leftover guac and that works well in a pinch for later, but for the browning, if you put it in a bowl with saran wrap and smush the saran wrap so that it sits on the top of the guac, with no air inbetween, it will not do the oxidation browning blech.

Or if you sprinkle some of that true lime on top. 

In case you ever make a batch for a party and have leftovers.

I like to take egg beaters and cook up a bunch of rounds like a crepe and stick them in the freezer (put wax paper between them). Then whe I want to wrap anything up I just use them. Can make sandwiches, pizzas, salad holders and anything else you can think of to put in them. Lots of  protein and no bad stuff.

Wow, I never would have thought about egg wraps.  Great idea!!

These would be great for wrapping up some meat, cheese and sour cream.  Faux taco style.  I may just try that tonight!

Fastest Chicken Salad.  I make this Sunday night and it's lunch for several days or a quick dinner when I get home late from a meeting.  It takes me about 10 minutes start to finish once the eggs are boiled.

Costco Rotisserie Chicken - both breasts
4 hardboiled organic eggs
chopped scallions
Hellman's light mayo (because I don't like regular mayo)

Chop and stir in the mayo.  Others add mustard to it.  Throw in some organic pickle relish if you have the carbs to spare.  Try some curry powder if it floats your boat.   Change up the seasonings for relief from boredom.  Me?  I'm boring and keep making the same thing.
