 I bought some queso blanco today at Harris Teeter, they did not carry it at our Sams.  I will have to find another market if I am in love with this cheese, it was very expensive at HT.  So tomorrow my breakfast will be faux french toast.

For today my eats were:

Atkins RTD
1/2 ham & cheese omelet
vegetable bean soup (a little carby)
steak on salad greens w/ tomato and cucumber
atkins bar
atkins bar
About time protein drink w/soy milk

Calories 1298,  Net carbs 43, Protein 118

Too many carbs but I did have lots of fiber and protein too.

For the fft do you just fry the queso blanco in butter or do you dip it in egg or something ffirst?

The following is how Becky makes hers:


Faux french toast is simple IF you can find the right cheese. Only queso blanco has worked for me. The other Mexican cheeses melt.

Fry slices of queso blanco in butter
Sprinkle with splenda and cinnamon
Top with SF syrup.

Enjoy!!!

I am making some this morning for my breakfast for the first time.

I just fry it on medium heat in a lot of butter.

Just had my daily fix. Yum.
