I am reading Gary Taubes book "Good Calories, Bad Calories." If you really want to know the science behind why eating low-carb helps you maintain a healthy weight, read this book. It goes into extensive scientific detail and provides many ethnographic studies that show how communities of people, many times Native Americans, experienced astronomic obesity rates when they moved from a no to low-carb native diet made up principally of protein to the Western diet of sugar, starches and refined carbohydrates.
