My shopping accomplishment for the day.

Monday is usually my shopping day. I think I did fairly well:

string cheese
cream cheese
brick of colby cheese
shrimp wrapped in cheese and bacon (2 boxes)
steak bits wrapped in bacon
fixin's for beanless chili (ground beef, can spicey tomatoes, pepper, onion, sour cream)
fixin's for beanless chili dip (canned chili, cream cheese, colby cheese)
shrimp ****tail ring (on sale at Walmart)
frozen cooked shrimp
Sugar Free syrup for faux French Toast
Carb Smart ice cream
Atkins bars (the no sugar alcohol ones)
Cheap peanut butter for Paula Dean's flourless PB cookies
Chobani Greek Yogurt (plain)
2 bags of generic splenda
Dark chocolate bars from Aldi (8 or 11 carbs per piece)

And even more important is what didn't jump into my basket: high carb candy, corn chips, bananas, rice crackers, high carb ice cream, Greek yogurt with fruit and sugar added, etc..

I'm really happy with my trip to the stores. I plan to have a great week.

Say, what do you do you use for your "faux" french toast?

Queso Blanco slices fried in butter sprinkled with Splenda and dipped in SF syrup. NOM. NOM.

I figure 4 slices = 8 carbs. 4 in the cheese and 4 in the SF syrup.

Yummo. A reason to get up in the mornings if ever there was one!!!

I looked up Paula Deen's cookie recipe. Do you substitute Splenda for the sugar? How many carbs per cookie?

Hi Donna,

I make small cookies and the carbs are just from the PB so I count them as 3 carbs each. But that is just my guesswork. Yes, we sub splenda for the sugar.

Don't overcook. They can be crumbly. I find using cheaper PB works better than using good PB. I think it is oilier.
