Congrats on the weight loss, Becky!!

I love the ideas I'm getting on this thread......

Here's what I had:

B: eggs with zucchini and cheddar
L: ultimate salad (spring mix, chicken, sharp cheddar, sunflower seeds, garlic and herb dressing)
S: 2 SF Russell Stover chocolate covered coconut candies (made me very nauseous)
D: spaghetti squash with butter and parmesan, meatballs w/ pizza sauce

Atkins bar  1/2  (11)
(big mistake did not know there were different phases of these what is the difference between carbs on back 22g  of bar and 4g carbs on front of the bar  will not eat again till I read up on this )
total 19.2

We were just talking about the net carb v. real carb issue earlier. I count net carbs but I'm not trying to get in ketosis. I just need to get my carbs down under 75 or so to loose weight.

Even WITH those carbs you were still really low. Good for you!!

I am down 17 pounds in 17 days, which is neat on one level, and plainly unhealthy on the other (since I really only have about 5-10 more to go).  Need to step DOWN my weight loss, but it's hard to do that.  I know that in a week or so I will be out of induction ketosis and the scale will move depressingly slow.

But I made a decision this morning that I would try to get my carbs comfortably up to about 40, then increase it over the next few days to sixty, and see what happens.  Kinda nervous about that though!

Morning snack:  Chopped liver -- It was there, I ate it, get over it.  Mmmmmmmmm

Breakfast: 
Fried Cheese with Marinara
Coffee with Full Cream
A poached egg with hollandaise

Lunch:
Fage 0%
Full fat cottage cheese

Afternoon snack:  More chopped liver and some fried roast beef

Dinner:  
White wine
Coq au vin
A few cashews


Feel sort of like a cad because I'm spozed to be slowing weight loss but nervous about that.  Just assuming it will come to a screeching halt once I get back in the classroom, and the stress level climbs up again.

Today's totals:

1400 Calories
41 net gm carbs
102 gm protein


Very, VERY worried about carb creep as I begin to slow my weight loss.

I've seen fried cheese several times, and it sounds yummy, how the heck do you do this?  What kind of cheese do you start with?

You use a Mexican cheese called either queso blanco or queso para freir (I've used both). It comes in a block, and I just slice off a few pieces (not too thin or they will be too flimsy to flip and can burn easily) and fry in a pan on the stove in either butter or oil. It doesn't make a big melty mess like other cheeses would. The cheese itself has a VERY mild flavor. I describe it more like tofu where it doesn't really taste like anything until you cook it in/with something else. Because of this, yes, it's great with marinara, but it also actually makes a surprisingly good substitute for french toast (fry in butter, sprinkle with cinnamon and sweetener, dip in sugar free syrup).

I wouldn't expect your loss to continue at the rate of an average of a pound per day - it should slow naturally because the initial big loss you see when you start low-carbing is primarily water and glycogen stores being depleted. Your plan sounds good, and I think you'll be just fine  :)

That is a lot of weight loss!! Wow!!! Have you had WLS?

Perhaps you need someone else to do this thread since I am a high carb person compared to you guys.

I shoot for 75.

you are doing a great job..thats what I like about this we have all different kinds of wls and different levels of low carb..Its great
