Atkins and Low Carb Weight Loss

I am seeing good results, I lost 4 lbs this week (I'm guessing water weight)! I really don't know why I torture myself and give in to junk but I'm thankful the holidays are over - this has made it way easier to focus!!!

I did my good office mate duty and brought in cupcakes for my office mate's birthday, and I didn't have a single bite! Here's what I did bite:
- 6 slices Cracker Barrel cheese (2g carbs)
- double protein hot chocolate (9g carbs - 1.5g fiber)
- egg salad consisting of 2 eggs and mayo (2g carbs)
- cocoa and cinnamon roasted almonds (12g carbs - 6g fiber)
- boneless, skinless chicken thighs marinated in asiago cheese and garlic dressing and topped with parmesan and romano shredded cheese, side of baby brussles sprouts cooked with butter, garlic, and parmesan and romano shredded cheese (11.7g carbs - 3g fiber)
That brings me to 26g net carbs, comprising a mere 6.7% of my caloric intake for the day.

Well... I didn't post the double protein hot choc... but I use swiss miss diet hot chocolate, and add chocolate protein powder to it (1-2 scoops depending on size of cup). I've also added 1 scoop of vanilla and 1 scoop of chocolate to give it a creamier texture.
Just remember when you are adding protein to hot liquid, the liquid needs to be UNDER 130 degrees. Or - you can mix the protein in cold water or milk to make a slurry, then pour the hot liquid (hotter than 130 degrees) over it. Otherwise it will clump and get real nasty.
I drink protein coffee every day and do it either 1 of the above ways,

I have used the Swiss Miss packets in the past, but I gave them up to further reduce the carb total. Instead, I use 1/2 cup heavy cream and mix in 2 scoop of my protein powder (mine is chocolate mint flavor, but plain chocolate would be fine). I then heat 12 ounces of unsweetened almond milk in the microwave and then add the hot milk to the protein mixture while stirring. Yo ucould also just use water instead of almond milk, could do all almond milk and no cream, could use other milk beverages...whatever fits into what you're doing :) I started adding the cream because I wanted more fat in my diet, but I'm going to try unsweetened coconut milk instead of the cream and almond milk once I run out of cream (the coconut milk has more fat than the almond milk, just not as much as the cream).
