THIS IS NOT A NEW YEAR'S RESOLUTION

 I don't do those.  Low carb is a way of life.  Besides, I made a no resolution resolution ages ago and I'm sticking to it.   

How are my fellow low carbers doing today?  Its nice to have somewhere to post about a post op low carb life style minus the critique of those who can eat carbs and still loose/ maintain. 

It is time to get off the post holiday feeding frenzy.  I am weening off carbs of all types and I will jump start with an Atkins Fat Fast (See Atkins New Diet Revolution, 2002 edition).  I have a difficult time getting into ketosis even on induction.  This is protein deficient but it is only for 3-5 days max then induction.  

I must stock my kitchen so I'll begin on Sunday.   In the mean time I'm getting my carbs and calories back to normal levels.  For five days I played the fool and enjoyed my holiday transgressions.    Back to reality time for me.

I was blessed that we just stayed home and there were not holiday to-do's to be a part of and I could just cook typical meals for the holidays, but delight my husband with a little cranberry stovetop stuffing.  :}  (The man eats ****pots of processed carbs and is as fit as he ever was.  Freak.). 

So luckily I do not have any jones that I am needing to free myself of. Hooray for small favors, that will probably be when I come back from Hawaii next month, although.

But - to support me, I have a turkey breast all roasted up and cooling down, getting ready to be prepped and some of it frozen, I have a nice big ol batch of popeye pies in the freezer ready to thaw and convect. 

And I have my sanity (edit to add - as far as I can tell :} ).  Yaay!

Good for you! 

Please share with me.  What are popeye pies?  Sounds intriguing.

Glad to share!  My mama used to make this when I was little and we were po :}  She called it African Popeye Pie and said Popeye brought the back from Africa when he went. (Course, it did not occur to me why anything in this would be African or when my mama ever hung out with Popeye, but I liked it, and well - it was sooo exotic! :} ) 

Popeye Pie!!   I cook in bulk one day a week and then do not have to rush to think up or make meals during the week. I make a week's worth of these at a time. They are also EXCELLENT traveling food.

1 ounce ground beef or leftover meat (pork roasts are nice too!)
1 ounce fresh spinach
1 slice sharp stanky cheddah
1/2 T ground flax
1 egg
2 shakes Chicago Steak Seasoning (this is my favorite, but I use greek seasoning, and tandoori and curries too, whatever you like!)
1/2 t virgin coconut oil for the cooking in.

mix em up, put them in the cute bowl with the melted oil in it and cook in the convectoMajiks oven for 25 minutes. 

A nice fresh squirt of lime on top or truelime sprinkles are yummy too! 

Food porn!!  Fresh batch out of the oven!

Letssee, stats on these - I am on maintenance so I tend to have denser caloric meals now.

calories (for ground beef, sharp cheese and 1/2 T of coconut oil )
315 calories
3.87 total grams of carbs (3.031 g fiber if you are a net carb person - so that would be less than 1 net carb if that's your mathing)
21 grams of protein
24.98 grams of fat.

Like I had mentioned to someone else, fat is not the problem with me. 

I never felt compelled to eat a stick of butter, unless there was a sleeve of crackers hanging around.  *

OMG this looks fantastic.  I love spinach.  I don't do dairy (well, I'm not supposed to...) but I will be trying this minus the cheese.

I enjoy it muchly!  I tried just the egg, spinach, flax, and cheese combo without the meat, and it was not a texture I enjoyed, so I tossed the meat back on in!

Its easy to freeze and then just pop in the nuker or I have a convection oven that makes it nice and crispy.

They are also good traveling foods!  I pop them into separate baggies and can just eat them out of the baggie (like you would hold a sandwich). I also munched them when I walked my marathons and half marathons instead of eating the sugary goob they were passing out!
