NEW IDEAS: What's for Dinner?

Seasoned meatloaf and burgers are my favorites. The flavor possibilities are endless. I have tons of seasonings and spices in my cabinet and love to change them up to make new delicious flavors. I also love adding cheeses too and low sugar dressings. You can have Greek versions with Feta and olives, standard Italian flavors, Asian... get creative and you'll come out with some great stuff.

When I get that craving for mashed potatoes, I make mashed cauliflower. It's really good.

I had mashed cauliflower tonight (used too much garlic) and meatloaf with spinach, roasted red peppers and feta! Lovin' low carb lifestyle!!

Alright, so...I generally hate cooking, and my husband does not cook (I had to teach him how to cook a frozen pizza - you know, follow the directions on the box). Our lifestyle right now is such that we literally eat out 7 days a week. I always order protein and broccoli or mashed cauliflower instead of a carby side, or an entree salad (no croutons or other carb-filled toppings). My favorite dressings are honey mustard and thousand island, so I get one of those on the side and then ask for a side of mayo. I then mix the dressing and mayo together so I end up using less of the actual dressing since they can be high in sugar.

On the odd days we do have dinner at home, I like to make it quick and easy. Super Walmart sells Sam's Choice brand stuffed chicken breasts that I like. They come frozen, 2 to a box, and they're like those stuffed chicken cordon bleus you can buy, except they aren't breaded at all. They make a few different varieties, and all are pretty low in carbs (some lower than others depending on what they are stuffed with) and sky high in protein. My husband loves them, too.
