I love breakfast casseroles. I like to make them in my big lasagna pan and then cut it up into portions, so they are ready to go for work, etc. My favorite is Spinach-Sausage Egg Bake found on this website: http://www.5daypouchtest.com/recipes/breakfast_bakes.html. It is SO good. That's one of Kaye Bailey's websites. She has a lot of good recipes posted on her Living After Weight Loss Surgery Website and I have a couple of her cookbooks.
