Hi yall,

What is your fav recipe to cook?

Mines would be vegetarian chili.... Its quick and easy and tastes delish! I like to change it up as well like try different ways of making it too. To make things even more quick I go to our local vegetarian market and buy their vegan chili mix that is sold cheap by the lb and simply add tomatoes and beans. Everything else like the soy crumble and all is already in the mix.

I love Spaghetti Squash with homemade "meat sauce". I make a marinara sauce and then add some of the Quorn brand of crumbles. My kids go crazy over it. They gobble up the squash, and eat way more of that than they do the real spaghetti.

Thanks for sharing! I have always wanted to try then but never did. It looks and sounds delish too. Is it pretty easy to make? I have seen a kitchen tool at walmart called Veggetti where you can easly make thin spaghetti like shapes out of vegetables and first came to mind is I can make spaghetti squash with it.

One of the nice things about spaghetti squash is that once it's baked, you can use a fork to pull the strands right out of it. No special tools required. You just pierce some holes in it, so it cant vent while it's cooking, then bake it for about 1 1/2 -2 hrs. let it cool a bit, slice it in half, then pull out the seeds and use a fork to pull out the strands. Voila, you have "spaghetti". lol

Thats awesome! As silly as this sounds, I never knew that. I will definitely have to give that a shot, hence the name "spaghetti" squash huh lol.

I love chili, and that sounds great. I really like the idea of a premade vegan  mix that I can add things to.

I like to mix lowfat Cedars Greek Tzakiki dip wih nonfat plain yogurt  2-1  andadd homegrown cucumbers if i have some .

I also make my own healthy nachos with fresh fat free corn tortillas crisped a bit in the oven , then topped with homegrown chopped tomato, refried fat free beans , fat free cheddar or american chese slices , chopped onions , basil  and cheddar cheese /butter buds popcorn sprinkles .  This is SO outstanding .. especially dipped in guacamole and fresh mango salsa !

This sounds great! I am a crunch addict I think... Sometimes I just crave to eat something that goes crunch! Lol So the idea of crisping the chips is great.

I make a spinach tofu sesame stir-fry. Really fast and delicious. I got the original recipe from the NYT here, but I've tweaked it all over the place (no sesame seeds, more chili pepper, low-sodium soy sauce, etc.).

I also loooove a good veggie chili. So easy and filling!

OOOH! Thanks for sharing this is sounds like it would be very delish. I find that if I dont cook spinach very well then it is a little too fiberious/chewy stems for me to digest. I would have to make them really well done and be soft and tender.
