A high school friend of my dad's is coming down with his wife for lunch today. I've never made a "luncheon" for other people. I am great at dinner food and breakfast food. But what do you serve for lunch? So I'm making a smoked salmon frittata with a local peach spinach salad. Felt lunchy/brunchy.

I was enticed by some ads on Instagram for frozen, ready to blend smoothies. But after looking at a YouTube video of someone making one of their products, I thought I can do that so much cheaper without all the packaging waste. So I'm going to freeze some cut up peaches (in season here. Yum), banana, avocado, spinach and blueberries (also local and in season) on a cookie sheet so they don't clump together then divided into freezer bags for blending fast smoothies. I have some vanilla protein powder to put in there and can throw in some almond milk. Maybe that can be lunch several days a week?

I need to go start getting ready to cook. Have a great weekend everyone!

PS - Ann your mindful cooking sounds marvelous. And Liz, I hope that was a real comment you heard and not a daydream!

Peeking in - Good Morning All. Didnt get a chance to post again yesterday as it was a busy day/night but so magical. Love love love Disneyland. Have posted pictures on facebook if you want a peek.

Today we pick up hire car and head for Palm Dessert. Dont envy DH with driving on the wrong side of the road but we will take it slowly. Open air Hummer Tour booked around Joshua Tree National Park tommorrow. Looking forward to that.

Eating pretty well. Learning fast about how huge the portion sizes are! DH and I shared a main last night. Walking has been over 20,000 steps past 2 days so thats good. My knee would not agree but we are working through that!

Ann- glad you had what I term a blob day and that your eating is so mindful. I think it helps you enjoy your food so much more

Liz- sorry about the clean ups. Im sure you didnt daydream that. As always you are in my thoughts

Drink lots of water and replace your electrolytes! You will dehydrate REALLY fast in the dry desert heat with no shade. The Joshua trees are so interesting looking. Like Dr. Seuss trees.
