Lower Calorie Sous Vide Egg Bites

Played with the recipe a bit to lower cals. Pretty tasty, if I do say so myself.

4 large eggs

1/2 cup cottage cheese, 1% fat

1/4 cup crumbled Feta cheese

1.5 oz ham, finely chopped

2-3 TBS fresh Basil, finely chopped

Whip eggs and cheeses in the blender until smooth. Add ham and basil to egg mixture. Pulse 2 or 3 times. Pour equally into silicone sous vide egg bite mold. Cover tightly with aluminum foil. Add 1 cup water to instant pot, place rack over water, place covered egg bite mold on rack. Close lid. Make sure pressure valve is closed. Set Steamer setting to 10 minutes. Use the natural pressure release method for 10 minutes before removing egg bites from pressure cooker.

Each egg bite is 74 calories, 7.5 grams protein, 4.5 grams fat, .5 grams carbs. ( I rounded up the macros to the nearest half gram...)

Using the Feta vs. Sharp Cheddar brought the calories down by 46 for each egg bite. Works for me!

Sounds great. I don't have a sous vide and wonder if I could just bake these in muffin tins. How many does this make? D
