I'm glad you got a bit more sleep Ann - hopefully you can build back to more with some help. Maybe maximizing light exposure during the day would help?

That recipe looks really good and I need a new evening snack! How much syrup does one use to substitute for 3/4 C sugar? I can't seem to find that easily by googling.

Today we might go to the beach, but it is a bit cloudy so maybe not... 4 more days for BIL to be here. I'm kind of looking forward to being alone again for a bit. But before we do anything there is laundry to do and bills to pay.

I would start with 1/2 cup, and if you are not averse to eating raw egg, taste test it and see what you think, add more as needed. For some reason, when it's hot from the oven, it's not as sweet as when it has cooled. And because it's not real sugar, it doesn't cook silky smooth, it's more grainy, the fiber of the pumpkin is more notable.
