I rarely use recipes. I might look at a few on-line to get the general gist, then make it my own. Today I will sauté onions, broccoli, red peppers and bamboo shoots in sesame oil (with added fresh garlic and a bit of fresh ginger****il crisp tender, then set aside. Saute' the shrimp, set aside. Add canned coconut milk and red curry paste to make sauce - might add some red chili flakes if not hot enough. It also calls for fish sauce but local grocery store only had oyster sauce, so I will use some of that. Simmer for about 10 minutes until sauce is a bit thickened and add back veggies and shrimp until coated. I will make some brown rice to go with it for those that choose to eat the carb (I usually have a little). Pretty darn easy except for all the chopping of the veggies which I have already done! I thinly sliced everything but the broccoli and even that is cut pretty small. I'll try to remember to post a pic when it is done! Oh, I forgot to mention one key ingredient - basil (a must have for Thai). Fresh Thai basil would be best, but alas, all I had on hand was dried basil leaves, so that is what I used. Almost done cooking! Oh my goodness, this was sooooooo good. A winner for sure, everyone in the family loved it! Calories a bit high with the coconut milk, DH is in serious need of calories!
That looks sooo good! I rarely wing it with recipes (don't have confidence in my cooking skills). DH used to when he did all the cooking (and of course DS does).

I think last night's sleep was the most I've gotten in a single stretch since two nights before my husband died. I woke up feeling almost "normal," i.e., feeling reasonably rested, sensing little anxiety, looking forward to the day, able to focus on simple tasks, and feeling less scattered. I wanted to pick out something attractive to wear and put on makeup, and I didn't feel (very) guilty about feeling better.
Yoga class was wonderful today. Then I checked off six stops and errands, including a visit to our local service office of the US Department of Agriculture and made an appointment for an agent to come out to our property soon to review how I'm maintaining our little 25 acres and how I might improve my stewardship. Our tax dollars at work! Yea!
Then I went to the feed store and bought some more corn for the deer and, of course, the possums and the racoons and the crows, although they're not my concern. Also got some good advice about how and where to dispense the corn.
Other errands included groceries, the post office, and the satellite TV office (where they gave me a new $70 remote for free). Wrote some thank you notes, did email, fixed lunch and read tons of emails, our group's messages, and the newspapers (online). Now here I sit - ready to go outside and distribute deer corn and take my afternoon walk. It's gorgeous here - almost 60 degrees and only a light breeze.
BTW, last night I played the piano for my husband on the grand piano he bought me for our tenth anniversary. I cannot express how wonderful that felt!
Oh, and yesterday's 10 V/Fs came from carrots, lettuce, tomatoes, grilled sweet peppers, bamboo shoots, greens, mushrooms, and lots and lots of black table grapes.
