Peanut Butter "Milkshake"

I can't quite remember where I found this recipe the other day, so if this is a duplicate from another one of our group's posts, my apologies. 

I read about this PB "milkshake" sometime last week and was intrigued. I picked up the coconut cream last weekend with the idea of giving it a try.

Ron came home with a sore back today and his go to is a milkshake for comfort and solace, so I offered up this concoction. Let me tell you, it hit the spot. It is not what I might call a weight loss mode appropriate drink, but it certainly fits the low carb bill! It has just over 8 carbs, 4+ proteins and a whopping 22 grams of fat. It packs 256 calories per serving.

BUT I am completely satisfied and have no desire to snack. As a matter of fact, I am FULL! This load of fat may be the key to get through the next day of detox. I will keep this recipe as part of my arsenal to keep carbs low. Rich, creamy, satisfying. The PB is not over bearing, but is mild enough to allow the coconut cream to come through. Feels good in the mouth, too. The coconut cream leaves a behind a hint of fat like a super premium ice cream. (Nope, didn't like it at all, did I? LOL)

The next time I'm going to add some Dutch cocoa powder to see if I can make a chocolate PB milkshake resulting in the same satisfaction. 

Ketogenic PB Milkshake (from the Cooking is Pun blog)

2 TBS Peanut Butter (old fashioned, peanuts and salt only - no Jiffy type!)

1/2 cup coconut cream (Trader Joe's)

1 cup unsweetened almond milk (she says to use whatever milk type you like - including heavy cream, which I just couldn't do! maybe at goal weight, I'll give it a try!)

1 tsp vanilla extract

2 tsp Splenda (she used 1/8 tsp Stevia extract, but I didn't have any).

1 cup ice. 

Throw it all in a blender. Blend till smooth - about 20 seconds in my Vitamix. 

Makes 2 servings. 

Again: 256 Calories, 22 grams fat, 5 protein, 8 carbs
