Pancakes!

Ok, these came out great!

Really miss pancakes sometimes, I enjoy my eggy-meaty bfasts, but sometimes you want to just settle down with some butter topped 'cakes.

Here's the link to the recipe.. I have not explored the blog too much yet- but I have slowly started reading more online about SCD/GAPs/Paleo as it interests me, and personally since my family history is rife with ulcerative colitis/IBS/gut issues.. both my sister and father have had all or part of their colons removed due to it, and I have my own share of issues gut-wise as well.. Plus the gut is just such an interesting place, not just a food processing center as so many think.

Here's the recipe. My only tips- use a hand mixer when you add eggs- the gelatin/coconut flour will lump, a beater defeats this. 

Add a tiny smidge of salt.

I added vanilla & roasted cinn..

They cooked up perfect, flipped well for me & tasted great!

I'm with you, sometimes I just really want some pancakes.  I've done them a bunch of different ways - cottage cheese, almond flour, protein powder...  I have to admit the Big Train low carb pancake mix is still my favorite, hands-down.  Hmm... haven't had pancakes in months.  Might be time!
