Something good to eat

Ha, that got your attention. I made something last night that turned out pretty good.

Shrimp Ricotta Bake

6 oz cooked shrimp. i use Costco lime cilantro shrimp.

1 15 oz container fat free ricotta cheese

3 eggs

some sun dried tomatoes (optional) or some other chopped veggies like celery or carrots.

salt, pepper and maybe a bit of garlic powder.

blend all this stuff in the food processor and dump into a pyrex pan sprayed with pam. i used a loaf pan but an 8 x8 would work.

bake at 350 30 to 40 minutes. cool slightly and slice.

has about 150 calories a serving and maybe 10-12 g protein.
