Oh my, that sounds good. I LOVE mushrooms. I will have to try that.
I made some modifications to the soup because, as I mentioned before, I tend to never stop eating anything with carrots or celery in it. Instead of celery, I add spinach, instead of carrots, I add cabbage. Also, I have grown to love asparagus lately, so I throw in the peas with the ingredients that I blenderize and the asparagus, I put in at the end along with the shredded chicken.
Also, a dollup of sour cream and fresh bacon pieces make it heaven.
I think it is just an amazing soup, no matter what you do to it.
Awesome, that is exactly how I use the recipe as well. I modify it to fit what I have in the house, but lately, the wild mushrooms have become a "must have" they really take it to another level for me. I buy them from pistol river mushroom website. It seems to be the less expansive way to go since I go through them like crazy. You might also try my tortilla (tortilla-less soup), it's just as lean and has different flavors that are also really good. Feel free to change things around on that recipe as well. It's good to switch things around a bit so that you don't get burned out on any one soup.

Happy new year everyone! I've decided that it's time for me to quit lurking and start posting! It's been about a year since my VSG so I thought this would be a good time to start getting some accountability - whether my weight is up or down. I'm currently 99.8 lbs, which is a little lower than my comfort range of 100-103. I am 5'1".
I probably won't be able to post daily, but you'll hear from me once a week at the very least.

Thanks Elina! I'm a big fan of both your posts and your recipes! I think I'm smaller than you only because I'm only a year out. I hear there's a tendency to regain around the 2nd or 3rd year after surgery, which makes me a little nervous. Its part of the reason I'm posting for accountability now.

You are right, at one year out, I was at 101 pounds. Now I tend to be closer to the 105 lbs. mark most of the time. I gained a bit in the last few weeks, all the way to 108 lbs. and now I am fighting to get back to the 105 lbs. I am certain it can be done. To be honest, 101 lbs. didn't look as good on me as 105 lbs. and some people even prefer the 108 lbs., but I am most comfortable in the 103-106 range. You are right to be aware, the weight does creep back on if you don't keep an eye on it. Sounds like you really get it.

I am certain you'll prevail over those three pounds - you always do (I know this because I've been reading these boards backward and forward!). When it's my turn to fight weight gain, I hope I manage even half as well as you do.

You will get back to your comfort range, as will I! I have folks that think I look a bit better in the low-mid 140's (hanging right in the mid 140's now..) but I prefer myself a bit leaner- mid-high 130's.. anything under 135-136 I start getting a little concerned about being too boney though..
Soooo, been cutting cals a bit and will be back in range within a few weeks I'm sure. Just made a big batch of pizza chicken (home-made sauce, chix breasts... can be nibbled on all day.) One of your soups this weekend will be made as well... point is, not to get complacent and not nip the small gains when they happen.
Yup, you got this too. I really think that it is all about catching it early and not playing ostrich ever again. I have many skinny friends and they are always making little adjustments to their eating based on their weight. I know that a few days from now or even a few weeks from now, I will once again be 105 lbs. I know this to be true because I am going to make it happen, there is no other choice and nothing else is acceptable. I know that you too will be back in your comfort zone in just a bit. You are already doing what needs to be done in order to make it happen. That is the difference this time; we will not deny reality. Having VSG does make it easier, even this far out, it is not the same as before surgery.
