What's Your Fav Vegetables Right Now.....

For me..... goes in phases......

Right now I'm into Celery, Cabbage, Thin Asparagus, Broccolini..........

I try and eat a veg with every meal.... even if it's just a minor player..... I also "try" and get a veg only snack in during the day.....

What veg are you into right now?

Roasted anything is my current go-to. I like to make a mix of whichever dense vegetables catch my eye: broccoli, cauliflower, squash, snap peas or green beans, peppers, carrots, baby corn, onions, whatever - as long as it's dense it'll roast well - plus mushrooms. All roasted with a little olive oil and garlic and sometimes sprinkled lightly with parmesan cheese or almond chips. Sometimes it's whatever mix I grab, sometimes just one vegetable (usually broccoli or fresh green beans).

Raw for snacking I prefer broccoli, cauliflower or baby carrots. Other than that, you can't beat a small salad of dark greens or spinach and whatever other veggies are at hand. I also tend to throw a few nuts or dried fruits in nowadays, not a bunch, just a few for extra flavor.

For some reason right now I am craving any mucilage nous vegetable any way I can get it; Okra, Leeks, anything.  Maybe it is something in the fluid my body wants to deal with the scarring and healing of my incisions but I cannot get enough.

Always tomato.  But at this time of year they are not the best.

Just roasted a wonderful sqaush and am enjoying that.

Vegetables have been a problem for me since I was a little kid.  My mom fed us as healthily as she knew to (supper consisted of a small piece of meat, a green veg, a green salad, and a small dessert, and always a glass of milk for me), but from my earliest years, the only green veggies I liked were green beans, broccoli, and (boiled) okra.  I learned to eat a few more in college, but I still struggle with them.  

There are days when I don't get a bite of veg in, because it is a constant battle in my head:  I need to eat a vegetable; I don't want to eat a vegetable; Eat a vegetable; I'm too lazy to cook a vegetable.  Pretty much the same battle I had / still have over sugar and junk carbs.

I love me some veggies!  Celery and broccoli and many others are always in the fridge and my current phase is roasted beets or brussel sprouts.  I literally crave them!

I agree with Mom- I roast almost all my veggies any more. Love sweet potatoes roasted with a little olive oil, fresh nutmeg, and cinnamon. Roasted beets, kale, cauliflower, broccoli. Just wish I could get in a little more.

isn't it great to really enjoy veggies?  a by-product of those months of protein drinks.   My faves are the mini cucumbers that i can only find at costco or the persian cucumbers from Trader Joes. Right now I can't get either one.  boo hoo.   The other thing is those mini sweet peppers that come in a bag. so good plain or with hummus. They are also super good if cooked in a skillet with a bit of olive oil - intensly flavored and good with any meat.

The Shrunk Nerd loves snow peas.  So much that we grow them in pots on our deck.  Extremely easy and couldn't be fresher and in our climate we can grow them most of the year.

I love red cabbage but hubby doesn't. gonna make sweet and sour red cabbage for turkey day.   diane

I love veggies, but I still love, love, love a thick chocolate protein shake. Weird i know.

Brussels sprouts and mushrooms and roasted edamame - but I eat just about any veggie. enlightened
