PB protein balls
I've been playing in the kitchen today, trying to occupy my mind.. Kind of anxious about the interview/job op thing.. no word yet- though it took them a couple weeks to contact me back after I put in my resume. They are not in any hurry apparently, ugh.
So today: PB Protein Balls..
I have some stuff that I never dig into- peanut butter for instance, I love LOVE the stuff.. and I have a bag of Smaps cereal that I hardly ever use since I don't do a lot of bfast cereals.. and I don't do a lot of soy.. I've wanted to have a quick on the go protein snack for post-workout, and to take hiking- something sweet and nutty. This came out pretty good and I'm sure I'll tweak it more on the next round. They are slightly crunchy, slightly cookie-dough-ish, very nibbly balls of salty nutty goodness.
Almost everything is in grams, just how I do stuff with my scale.. Naturally more with flax is crack, do not get it if you have a thing for PB! I put the Smaps in a processor and made it into Smaps dust first.. I didn't want "rice crispie" chunks in there, going for more crunchy fudge texture.
I made 8 small balls, each the size of a large marble, and the stats come to:
84 cals/4 carbs (2 fiber)/8 protein/5 fat per ball. I could easily nibble two.
I think next time (since my aim was to go a little higher in carbs originally, but I am having a hard time making myself do this).. I may add a touch of some honey that I was gifted from a good friend that has hives.. Nice rich dark, dark wildflower honey. That may also allow me to squeeze a little more whey in there too.. Next time, maybe! I never make stuff the same way twice.

Ghirardelli - Unsweetened Cocoa Powder , 6 g
Ideal No Calorie Sweetner - Brown Sugar Granulated, 3 tsp
Davinci Gourmet Sugar Free - Dulce De Leche Syrup, 0.5 Tbsp
Nutiva - Organic Extra Virgin Coconut Oil (Grams), 3 g
Dixie Diner's Club - Smaps Cereal - Sweet Maple Flavor, 1/2 cup (28g)
Now Foods - Whey Protein Isolate-Unflavored 100% , 25 g
Salt - Pinch, 1 gram

I interviewed for that- just been waiting on word since.. Really hoping for it though!
Yep- I just mixed it all up well so it was all incorporated, spend a little time kneading it- then formed into balls. They hold together fine at room temp, but storing in the fridge.
I had wondered about baking them but I'd def make them a little different to bake, more PB, some almond flour/coconut flour perhaps, more coconut oil if needed and/or an egg(s), plus I'd want to see if I could incorporate some protein powder too.. I'm thinking about it. This fall/winter is when I'll really start playing home-baker again (keeps me warm!!)
I have several low carb pb cookie recipes.. but they are just your standard cookie- prob delicious cookie, but not protein cookie. Now I have Cookie Monster in my head.. anyway.

I would love your BP cookie receipes. Don't have to have protein. I don't use the stuff anymore since I get plenty of protein in food. Maybe I should just to incorporate more into my diet for snacks.
Here's the PB recipe I want to try, the first one, I have all the stuff- just no real "need" for the cookies.. have to wait till I'm going someplace to make them since I don't want even low-carb cookies hanging around too long (because they won't, I'll eat them.)

Sound yummy. I can't seem to find the Davinci syrups around here. May have to order on line. Not sure I've ever seen the Smaps Cereal either. What is in this cereal? I'm thinking that I could replace with a similar cereal.
I don't think I've ever seen the Naturally More PB either. Going to have to look for it. Sounds like I need to make a stop at Trader Joes next time I'm in the city.
The PB I can find in reg groc stores, the Davinci isn't really needed for this- I'd skip it next time.. and the Smaps is soy protein cereal, kinda like hard rice krispies.. I have to order that from Netrition.com. In fact Netrition.com is where I get a lot of my syrups and all my lower-carb foodie stuff and protein, $4.95 ships anything, no matter how heavy!
